Oatmeal Peanut Butter Cookies

Today I made a batch of Oatmeal Peanut Butter cookies. If you love Nutter Butters (and who doesn’t?) and/or Girl Scouts’ Oatmeal Peanut Butter Cookies (aka Do-Si-Dos), YOU WILL LOVE THESE COOKIES! These cookies are a hybrid of both types of cookies. I’ll warn you up front that these cookies are L E T H A L! I guarantee you that one bite will give you a cookie experience to remember. They will command the attention and affection of all who eat it and in return you will be heaped with praises.

My friend Emily who doesn’t even like creme filled cookies puts it like this, “These are a slice of heaven.” You had to have been here when she was eating these cookies because her daughter was trying to talk to her but Emily Shhh’d her for the sole purpose of eating her cookie in silent reverence. My friend Debbie had an even funnier response.  After taking a bite, she said that these cookies were the “Oh Honey, I’m sorry I crashed your truck” type of cookies.  It would only seem appropriate the originial creator of these cookies be sainted.. unfortunately it isn’t me.  Nevertheless I am thankful because these are my new favorite cookies (for now).

Oatmeal Peanut Butter Cookies
Recipe from Allrecipes.com

Ingredients:
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup peanut butter
1/2 cup white sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
3 tablespoons butter, softened
1 cup confectioners’ sugar
1/2 cup smooth peanut butter
2 1/2 tablespoons heavy whipping cream
Directions:
1.     In a large bowl, cream together 1/2 cup butter, 1/2 cup peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
2.     In another bowl, combine the flour, baking soda, baking powder, and salt. Add these dry ingredients to the creamed mixture. Stir. Add oatmeal and stir.oatmealdough

oatmealball3.     Using a cookie scoop, make uniform cookie dough balls and then cut them in half down the center. Roll each half into a ball and place them onto a greased baking sheet pressing each mound down with the palm of your hand to 1/4 inch thick cookies. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until cookies are a light brown.
oatmealbaked4.     To Make Filling: Cream 3 tablespoons butter  with the confectioners’ sugar, 1/2 cup smooth peanut butter, and the cream. Fill the filling into a pastry bag or large ziplock bag (cutting the corner to make a make-shift pastry bag) and squeeze  filling onto half of the cooled cookies, then top with the other half to form sandwiches.  Enjoy!

These cookies are awesome. They are not the type of cookies you could just keep on eating all day. These cookies are special cookies.. the kind you savor with each bite.

This will perfectly fill in the gap from when do-si-dos aren’t as readily available for purchase.

I was the GS Cookie Manager this year and last year so I’ve eaten my fair share of Do-So-Do’s and this cookie, if you are willing to put the work into it (which isn’t very much work at all) is better than the GS Do-So-Do. Even the other moms in our GS agreed.

OMG! you hit me where I live. I have a few great white bread weaknesses and nutty butters are one of them. Love this idea. Wonder how I can lighten them up, since that is my special purpose on earth. Stay tuned……

Did you cut a scoop of dough in half and count it as 2 cookies?? By reading the reviews at the link, you want to make these small? How many sandwiched did you get?

I made these – doubling the recipe. The only thing I changed was slightly less butter and salt. They were WONDERFUL – just as you described. I think next time I might grind up the oatmeal, but otherwise won’t change a thing. The filling was the right amount – no leftovers. Thanks for convincing me to make these!

this recipe sounds delicious! i have all the ingredients and want to make them. only thing i don’t have is a cookie scoop. can you tell me what size you use? i looked at bed bath and beyond website and found 2 made by oxo good grips. one is a small size that holds 2 teaspoon and a medium size that holds 1 and a half tablespoon.
thanks for taking the time to read this. i am def excited about making these cookies since it’s girl scout season!

I believe mine is the medium sized scoop, but I have also made extra big ones using a large scoop. I think making them small would also be great!

I just made these cookies, and they are amazing. They didn’t take that long to make, either, despite the extra step of filling. Seriously, they’re some of the best cookies I’ve ever had. Period. That heavenly filling!

These look luscious. There’s a version in one of the King Arthur cookbooks which uses peanut butter, honey & powdered sugar for the filling. They’re delicious too – probably a ‘rougher’ textured cookie than this one. One can NEVER have too many Do-Si-Do’s!

These look so good! And it just so happens that they imitate my dad’s favorite Girl Scout cookie. I may have just found a father’s day gift :) Thanks for sharing…love the blog!
