Weeknight Comfort Food: Easy Mac and Cheese

Here is a mac and cheese recipe that is easy, simple, and filling. It makes a wonderful main or side dish, perfect for a weeknight supper.

Easy One Pot Mac and Cheese

serves 2-4 people

Ingredients:

  • 1 cup sour cream
  • 1 cup of cottage cheese (for less noticeable curds, place cottage cheese in the food processor or blender)
  • 8 oz of dried pasta
  • 8 oz of cheddar cheese
  • 1/4 cup heavy cream
  • pinch of salt, pepper, and paprika

Directions:

In a medium pan cook pasta according to instructions to al dente, drain and set aside. Turn stove burner to medium heat and add heavy cream, cheese, sour cream, cottage cheese, salt, pepper, and paprika.

Stir continuously until you have a nice cheese sauce. Turn off heat and place pasta back in the pan. Mix the pasta and sauce until each pasta piece is fully coated. Garnish with a little bit of cheese and serve. Enjoy.

Excuse me if I interject. I’m Simona, I’m Italian but I like visiting gourmet blog from other countries. As you know Italy is the land of pasta, that’s why i found the articles interesting!
I would like to report an Italian site which I personally found lovely. You can find many local products , like pasta but also BIO PRODUCTS as cheese with related recipes and you can also buy these products. I love italian food! Excuse the interruption again!
