I looked up non alcoholic substitues for cognac and peach juice, apricot juice, and pear juice are good substitues. I made this the other night with peach juice and turned out good. The only problem i had was actually coating the shrimp with the coconut. My coconut after toasting them got hard. Any suggestions?

A question regarding this recipe...if I can't use the alcohol when cooking then what can i use as a good substitute for the cognac?? I really want to try this recipe!
