Chocolate Covered Strawberries

Chocolate Covered Strawberries
[donotprint] Ten years ago today, I said “I do” to my husband Rob.  Three kids later, we are still laughing, encouraging each other, and closer than ever.  I had planned on baking a small anniversary cake but in light of what is happening in Haiti, my mind has been scattered with images and stories from this devastated country. In other words, no cake.   Instead, I will leave you with an easy, romantic recipe for chocolate covered strawberries.  Perfect for your sweet heart or any special occasion.  Enjoy!

Chocolate Covered Strawberries
Ingredients:

3/4 cup chocolate chips (half a bag) or melting bark
1/4 cup white chocolate chips
**if needed, 1 tablespoon of shortening
1 pound strawberries with stem, washed and dried

* I prefer Ghiradelli brand chocolate chips for white and dark chocolate because they seem to melt smooth better than other brands I’ve tried.

Directions:

Place both types of chocolate in two separate microwavable bowls.  Heat each one in the microwave in increments of 30 seconds each – stirring after each time until melted and smooth.  If for some reason your chocolate is not becoming smooth, add a tablespoon of shortening to it and then stir.

Hold each strawberry by the stem and dip it in either type of chocolate twisting it until it is completed coated.  Set the strawberries on parchment or wax paper to set.  Then take a fork and dip it in the opposite type of chocolate and drizzle it over the chocolate covered strawberries.  If you find the dipping chocolate is hardening, just reheat in the microwave for 30 seconds and stir.  Allow the strawberries to completely set up, approx. 30 minutes in the refridgerator.  Enjoy!

Happy Anniversary! These strawberries remind me of the ones that were sent to our hotel room on our wedding night with champagne. And which we ate, despite having eaten plenty of food at the wedding (including excellent homemade cake). Very fun and romantic.

I’ve done 78 cruises, worldwide, on Royal Caribbean. One of my favorite treats onboard is chocolate covered strawberries. I’ve never made them but I will try them now.

Happy anniversary! I love to make chocolate covered strawberries… Hubs and I made them together last year for Valentines day. Ours weren’t nearly as cute as yours, though… I love the little tuxedo ones :)
