Peanut Butter Cup Brownie Bites Recipe

I have a small confession to make.  I have a secret stash of Reese’s Mini Peanut Butter Cups on the top shelf of my pantry.  I usually access it nightly after the kids have gone to bed.  But today I had this thought.. wouldn’t these little peanut butter cups be so cute and so good inside a mini brownie?  It would be just enough brownie to suspend the mini peanut butter cup just perfectly.  Next thing I knew I was baking up a batch and popping them in my mouth.  Heavenly.

The nice part about this recipe is that the baking time is only about 15 minutes and the batter can be prepared in a mixing bowl.  No special mixer required.  If you don’t have a mini cupcake pan, these can be made in a 9×13 baking dish too.  Enjoy!

Peanut Butter Cup Brownie Bites Recipe

Mini brownie bites with a peanut butter cup center.
Ingredients
  • 3/4 cup butter, melted
  • 3/4 cup white sugar
  • 3/4 cup brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 40 mini Reese’s Peanut Butter Cups, unwrapped from the brown paper
  • mini muffin tin paper liners
Instructions
  1. Preheat oven to 350 degrees F. Generously spray non-stick spray into a paper towel and wipe the top of a mini cupcake pan. Line the tins with a paper liner.
  2. In a medium bowl, mix melted butter, sugars and vanilla. Beat in eggs one at a time.
  3. Gradually add flour, cocoa, and salt and mix until combined.
  4. Fill each mini cupcake tin slightly more than halfway but not more than 2/3 full. Place a peanut butter cup in each slot pressing it down until it is almost level with the batter. Bake in preheated oven for 15-18 minutes or until done. Allow the brownie bites to cool for 5 minutes before removing from the cupcake tin. Enjoy!

I’ve made a version of these using a peanut butter cookie recipe as the base, dropping it into a mini muffin pan, bake, and then as soon as they come out of the oven, push in the mini reese’s cups. They are amazing and so easy! I think I’ll have to give this brownie version a try as well.

These looked SOOOO good that I ran out to the store to buy a mini muffin pan and cooked a batch today! They were delicious! I’ll have to get some practice (occasionally allotting too much brownie mix), but even the casualties were saved with a spoon and glassful of milk! Thank you!

Hi Julie,
I don’t know… but I think it would be fun to find out. I would make these in a 9 x13 pan and just places peanut butter cups randomly in the pan. Let me know how it works for you!

If I did have mini cupcake pans and made these, I would probably consume more than, let’s say, 4 of them (conservatively speaking) in one sitting. Would it be overkill to drop a regular sized Reese’s peanut butter cup in a full size cupcake pan? (I’m taking a guess that 4 mini’s = 1 biggie) :)

Okay, whoever made that healthfood remark is wrong! I know it was joke, but, NO, these look like the kind of evil that you can’t keep your paws off of and cause you to gain 10 pounds in 4 days. Yes, the chocolate and peanut butter combo is from the depths of Satan’s pit. And how are you planning on topping this, Dude? Oh my goodness… Brownie bites are my favorite. For some reason I find them so much more interesting than regular brownies. I come from a family of chocolate and peanut butter lovers, and I know these would be a HUGE hit.

I made these today and they are SO delish!! I did have problems with them not wanting to fully come out; I think I tried to take them out too soon, but I solved the problem with the next set by using tiny paper muffin cups. The brownie part itself is so good, and combined w/the pb cups is heaven! I’d like to put these on my blog. :)

Hey Alice! I managed to borrow a mini cupcake pan from a friend (agreed to exchange use of bakeware for some of the finished goods). They came out RIDICULOUSLY good. An instant hit at the office and at another buddy’s birthday dinner. Thanks again for posting this!

I made these with a box brownie mix. Impossible for me to describe their awesomeness. It works better if you make the mix for “cake-like” brownies. They come out too soft and don’t hold up well the chewy way.

Hi, Alice! I made these for my mom, and she is HOOKED! They were really easy to make, too and needless to say, deeeelicious. All of the brownies were gone within a couple of days. Also made your chocolate chip cookies, and your recipe is by far the best I have ever tasted.
