How To Make Potato Chips In The Microwave

by Alice Currah on March 3, 2010. Updated March 27, 2010

[donotprint]A few years ago a friend of mine taught me how to make potato chips in a microwave. I thought she was kidding because I couldn’t imagine a microwave producing crispy chips. After cooking them for 5 minutes they were done, crispy, and wonderful!

Ideally, a mandoline works best to cut the potatoes paper thin. If you don’t have one you can use a vegetable peeler or slice the potato very thinly with a knife.  Cooking one batch doesn’t yield that many chips, but its a great snack-sized amount for 1 person. If you’re up for a fun project and have a potato lying around, why not make some homemade potato chips? Or if you’re like me and need to pack a snack for your kids lunch, voila! <– You’re the hero of the day! Enjoy! [/donotprint]

Homemade Potato Chips
Ingredients:

1 russet potato
Non stick spray
Parchment paper or glass plate
Salt and Pepper

Directions:
Cut a piece of parchment paper to fit the inside of your microwave. Carefully slice1/3 of a potato into paper thin slices using a mandoline, vegetable peeler, or sharp knife. You don’t want to cut any more than this because any extra slices laying around waiting to be cooked will turn pink in color. Completely coat the parchment paper with non-stick spray and place the potato slices in a single layer. Spray the potato slices with non stick spray and lightly sprinkle with salt and pepper. Turn off the rotating option on your microwave and cook for 4-5 minutes. Cooking times will vary based on the strength and power of your microwave. Some chips may turn very dark brown. Ideally you want them light and golden. Also in my microwave some of the chips on the outside layer didn’t cook as quick as the ones towards the middle, so you may need to remove the ones in the middle and cook the outer ones for an additional minute. Repeat the process until you’ve used your entire potato. Enjoy!

**WARNING** Some people have had their microwaves short cut, plates shatter, and potatoes go up in flames.  I’ve never had this experience before, however, please use caution and make sure you use microwavable plates.

**UPDATE** I’ve made several batches of this over the weekend.  If you don’t have parchment paper you can easily use a glass plate.  If you don’t have non-stick spray you can brush the parchment paper or glass plate with vegetable oil.. lay the potatoes down, and give the potatoes a light brush over again with oil.  Also, the less crowded your plate and parchment paper is, the less problem you will have with the outside chips not cooking as quick as the ones in the middle.

I’m skeptical, but if you say so I should try it ! You should add a warning label w/r/t the mandoline though – the tip of my index finger is feeling the aftereffects of me getting a little cocky with my Benriner and not using the guard!

I’m so intrigued! My micro doesn’t have the option to turn off the carousel so I’m hoping it will still work.

Seeing how easy these chips are to make could be very dangerous to my waistline. Can’t wait to give them a try.

I’ve made them a few times like this and like them. These are very agreeable to playing with flavors. Salt & vinegar, bbq, garlic, etc.

question – do you need to have the parchment paper? or will a plate or paper towel work?

HI Melanie,
Yes, a plate will work just fine but you will not have as much surface area as you would with parchment paper cut to size. I would avoid using paper towel as the potato slices will probably stick to it. Hope this helps!

I tried these about two years ago. And YES, it definitely works. But it is super easy to burn them. You literally have to be standing right next to the microwave and watch their every move. Trust me, I learned this the hard way. hahaha Something started to smell REALLY burnt and there was so much smoke coming from the microwave, everybody in the apartment came running (husband woke up) and wanted to know if there is a fire. We spent 4 hours on the balcony that night, because you could not breathe the air inside. I was just glad it was summer! haha

Wow this was… unexpected! Yet it was good! After my first and successful attempt, I tried that with a tiny bit of cheese on some chips, and with various spices on others. I didn’t expect this would even work, I think I’ve found my new not-so-healthy-yet-healthier-than-usual snack :)

No parchment paper … no option to turn off the carousel …. still worked fantastically!!! The carousel is glass, so cleaned it well and sprayed it with olive oil spray. It is also very large and could do a whole potato! My mandolin made them a little thicker than paper thin so took almost 8 min. Didn’t have to watch them at all the first 4 to 5 min and then you have to stand right there, because when they start turning brown, it happens in 10 to 20 seconds. they were sooooo wonderful! Best, most productive and most delicious 15 min I have spent all day! 8-) Thanks Alice! First time I have been to your site! I will be back often!

Amazing idea! now i’ll never have to buy them again. But i was wondering, what about flavor? im sure you could make them salt/peper flavor but what about paprika, ham, or cheese flavors? would something like paprika powder do it?
i think i’ll have to test it out and see what creations i get.

I make these often, and the simplest way is to slice them and then throw them in a ziploc baggie with a tablespoon of olive oil and whatever spices you like. Last night I tried some with Frank’s hot sauce, a batch with some very hoppy beer, and another batch with some Montreal steak seasoning. All very tasty!

Ok I tried them today with vegetable oil on a glass plate. My microwave was set on high and just after 1.5 mins they seemed to have been done. But there was something really wrong with my chips, they were stuck with the plate!!! Even though they turned out to be crispy and delicious, they were literally stuck to the plate. I had to scrape the chips off of the plate later. Any idea Alice on why this happened? Tips on how I can prevent this from happening next time?

alice March 14, 2010 at 2:15 pm

Hi Riot,
I have no idea why they stuck. This is pretty much why I use non-stick spray. Maybe someone else will chime in with some thoughts.

S0larus,
Try experimenting with other flavors. People have reported using vinegar, hot sauce, herbs, etc. Good luck.

Jali,
Not sure how to respond to your statement other than sharing that we use our microwave all the time.

That’s amazing. I would have thought that a microwave would never have been able to brown a potato. Do you have to lather on the non-stick spray?

Another trick is to soak them in ice water for 15 minutes before cooking; makes them crisper. Also works with julienne to make your own french fries or potato “basket” to put a steak on.

Thanks for great recipe, it worked the first time right. I am exploring means to prepare multiple stacks of in one batch instead of just one layer of chips.

Just a word of caution on the glass plate – Mine exploded in my microwave.

Most likely because it was part of a $20 Walmart dinner set… but still – keep an eye on that everyone.

Riot Gear:
i wouldnt know why but i have to ask, you had put oil on the plate or on both sides of the chips right? Because even if you did im sure they would stick anyways (past experience cooking). I’m using baking paper with a non-stick layer on one side.

Alice:
I’ll try those and see what happens. Thanks for the advice.

Why do you have to turn the rotation option off in the microwave?

Reply

53
alice March 14, 2010 at 7:04 pm

John: If the plate whether it is glass or ceramic is microwave safe, than it really doesn’t matter which one you use.

Tim: If you’re using parchment paper to cover the entire surface of the microwave… by turning off the rotating option, your paper and chips will stay in one place. Otherwise it will turn and your paper and chips will fold onto each other.

Dave: No I don’t lather on the non-stick spray. I just spray an light even mist over the paper and then the potato slices.

Josh: Sorry to hear your plate exploded. As long as the plate is microwave safe, it should work fine since you’re not heating the potatoes for that long.

I tried this tonight. It would not work for me. The chips never cooked. The first batch was super thin. I cooked for 5 minutes. Nothing. 5 more minutes, nothing. 10 minutes more, a few chips got half crisp and half uncooked. I then tried thicker chips. Same result. I thought, “My microwave must be broken.” Nope. It boiled a cup of water in 1 minute. However, the potatoes were always cool to the touch.

Thoughts???

Patrick: I don’t know what happened. I’ve made several batches of these this weekend and didn’t have any problem. I did discover though.. if you don’t overcrowd the paper or plate with slices, more of them will get crispier in less time. Have you tried baking just a few slices (like 5) to see how your microwave handled them? Other than that, I don’t know what to tell you. Sorry :(
