Last week I posted a wonderful recipe for Salsa Verde Chicken with Herbed Cornmeal Dumplings from Pam Anderson’s Perfect One-Dish Dinners: All You Need for Easy Get-Togethers. The week I returned home from New York City I was cooking out of her book to feed my family and boy did we feel spoiled. If you are not familiar with Pam, she is the former Executive Editor for Cook’s Illustrated magazine, currently a Contributing Editor for Fine Cooking magazine, USA Today Food Columnist, and a New York Times best-selling author of six cookbooks including this latest cookbook scheduled for release in a few weeks. She and her daughters, Maggy and Sharon, also publish a beautiful food blog called Three Many Cooks.
I had the privilege and honor of finally meeting Pam in her Bucks County, PA home where she and I both spoke at an all-day food blogging event. Part of the lovely swag we received for attending was a copy of her book. I knew the moment I thumbed through it I would love it. The book itself is beautiful. Each photo in the book makes you wish you could jump right into the page and start eating. The recipes are written clearly and some of them have footnotes for instant alternatives – got to love that! There are even wine suggestions for some of the recipes to help you take the guess work out of figuring out which wines pair best with each meal.
What I love about this cookbook aside from the beautiful food photography is how simple and doable each dish is. The recipes are inspired not only by American style comfort food, but she incorporates global flavors for maximum flavor with little effort. So far I’ve prepared three of the dishes and each one was delicious, satisfying, and memorable.

The cookbook includes favorite dishes like mac and cheese and blueberry cheese cake ice cream but also includes some fun ones such as carnita-style beef and white wine marinated strawberries. Portion sizes are generous and will likely give you some leftovers for the next day.
Would I recommend this book? Absolutely and without any reservation. These recipes would be perfect for a family dinner or feeding guests any day of the week. All culinary skill levels will enjoy cooking from this book.

In Pam Anderson’s cookbook, The Perfect Recipe for Losing Weight and Eating Great, she has a section on mix-and-match foil packets. I’ve been surprised how tasty (and easy) those meals are…you’ve got your meat/fish and veggies all in one, and they’re low-fat and low-calorie!

I think my favorite “one pot” meal varies by season. This summer it has definitely been stir fried anything. Stir frying is such a convenient way to make use of the surplus of veggies from our summer garden.
I love Pam Anderson’s recipe for Chicken Soup for Cozy Nights from her book, Perfect Recipes for Having People Over. I can’t get over how quickly I can make homemade chicken stock using Pam’s technique. It used to take me all day to make chicken stock. The chicken soup variations she provides are wonderful. I especially love the Curried Chicken Soup with Chickpeas and Cauliflower.
My favorite one pot meal is Chicken Soup with Dumplings and the dumplings look a lot like Pam’s from that picture you have above of her herbed cornmeal dumplings. Not rolled and cut but drop dumplings that get all billowy and soft after cooking on top of the broth. Come to think of it; I do love the soup, but it’s those dumplings I crave that are always the inspiration for making it.
I’ve already pre ordered Pam’s book from Amazon but on the off chance I should win I’m betting my children will fight over the 2nd copy!

There are many snazzy ones I like, but since I can’t get it here in Turkey and have to horde it when I bring a supply from back home, my favorite one pot meal is mac-n-cheese, hands down.

I am so happy to see this giveaway because my all-time favorite recipe is Pam Anderson’s Molten chocolate cakes with sugar coated raspberries. They are impressive, easy, and can be made ahead (even frozen ahead!!!). oh yeah and SO delicious!
