I love this Mexican rice recipe:
3 tablespoons vegetable oil
1 cup uncooked long-grain rice
1 teaspoon garlic salt
1/2 teaspoon ground cumin
1/4 cup chopped onion
1/2 cup tomato sauce
2 cups chicken broth

Directions

Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden. While rice is cooking, sprinkle with salt and cumin.
Stir in onions and cook until tender. Stir in tomato sauce and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.

I love to cook the rice in my rice cooker (cheapo one from wal mart) and then add a can of Coconut Cream (the sweetened kind) and a drained can of mandarin oranges. It’s a big hit with everyone who tries it!

Just saw this giveaway…way too late!! I received a Zojurushi micom rice cooker for my bridal shower and it truly is my favorite gift. The rice cooks perfectly every time, whether it’s white, brown, basmati…it even bakes cakes!! Great prize, Alice!!!

I know the drawing is over, and I don’t need the rice cooker anyway, but thought I’d throw in a mini testimonial – I got a Z. fuzzy logic rice cooker just last year, probably the previous model year version of this one – we absolutely love it – I make steel cut oats for breakfast, with a lot of additions, but the really neat thing about it is that I can set it up for breakfast the night before, tell it what time I want it to be done, and it cooks our breakfast. Nothing quite like waking up to breakfast already made! Of course, it also make a wonderful pot of rice. I’ve also made a couple of casseroles, and they came out very well. This would make a fabulous wedding gift for a couple who cooks this way.

Haven’t used a rice cooker in a couple of years, we’ve gone back to the stove method. I’m sure it’s not as good. Rice is always a bit un-done. Thanks anyway.
