After having my sons I started eating “clean” which means 5-6 times a day and includes a cup of rice each meal…this would make meal preps much easier!

My favorite rice dish is a healthy salad, including brown rice,cooked edamame beans, olives, green onions, feta cheese and greek dressing. Easy to make and taste even better the second day.

I love lime-cilantro rice: just squeeze lime and chop up cilantro into white rice that’s been cooked in chicken broth! I want this rice cooker soooooo bad!!!!

I love Indian pudding made with
1/2 cup cooked long-grain or basmati rice
1/2 cup whole milk
3 cup heavy cream
1/2 cup coconut milk
1 ounces sugar – (abt 1/8 cup)
¼ teaspoon ground cardamom
1 ounces golden raisins
made as follows:
1. In a large nonstick saute pan over medium heat, combine the cooked rice and milk. Heat until the mixture begins to boil. Decrease the heat to low and cook at a simmer until the mixture begins to thicken, stirring frequently, approximately 5 minutes.
2. Increase the heat to medium, add the heavy cream, coconut milk, sugar, and cardamom and continue to cook until the mixture just begins to thicken again, approximately 5 to 10 minutes. Use a whisk to help prevent the cardamom from clumping. Once the mixture just begins to thicken, remove from the heat and stir in the raisins and pistachios.
(this is a variation on a recipe I saw of Alton Brown’s)
1 ½ ounces chopped unsalted pistachios -, (abt 1/3 cup)

My fav rice recipe is cilantro rice. Sushi grade rice (we lived in japan for 6 years, that is all my kids will eat now), a big handful of chopped cilantro, garlic, fresh minced chilis, and chicken stock instead of water. Push go on the rice cooker and wait for the best base to anything Mexican, Thai, Vietnamese…. Etc, etc…. It is sssooooo good!!

Lazy girl fried rice. Cooked brown rice, frozen veggies, beaten eggs, and soy sauce. Toss it in a pan, and done.
