As someone who has been regularly using her stove top pressure cooker for well over 20 years, switching over to the Instant Pot takes a couple of years ago has made the whole idea of fix it and forget about it more doable in my kitchen. In fact, I own two of them because I’ve found it much easier to cook two things at the same time, like a vegetable or starch in one pot and a protein in the other.
I’ve found you can cook 1 cup of quinoa the perfect amount for my family of 5 for a single dinner. However, if you were to prepare 2 cups of quinoa, the leftovers hold well for future meals. I like making tabbouleh when I have leftovers, even if it’s for a single portion.
One of the most fool-proof recipes you can prepare in the Instant Pot is quinoa. It takes a minute to make, a minute to cook, and a wait time of 15 minutes before opening the lid. In that span of 15 minutes, I can grill vegetables and chicken on my grill pan and have a complete wholesome dinner in 20 minutes. And when I say vegetables and protein I’m talking about grilling asparagus and chicken breast tenders, both lightly seasoned with salt and pepper. It doesn’t get much easier than this.
Prepare the perfect quinoa in the Instant Pot in 1 minute.
- 1 cup quinoa
- 1.5 cups water or broth
- pinch salt
Add the ingredients to your Instant Pot.
Cook the quinoa for 1 minute and allow the quinoa to rest in the natural release stage for 15 minutes.
The lid should easily open but if not, quick release any remaining steam. Give the quinoa a quick stir before serving.
