Mother’s Day Ultimate Pancake

Mother’s Day is just a couple days away.  I thought I would pull out one of my favorite breakfast dishes from the archives to share.  Don’t let these pictures intimidate you, preparing this pancake is pretty easy since you’re taking your favorite breakfast elements and just layering them similar to a cake.  I originally posted this last year when I made this for Father’s Day but it would also be great for Mother’s Day too. Stuffed French Toast

I must have been living on a different planet because up until this week I’ve never had stuffed French toast.  You may be reading this wondering, “So what?  What’s the big deal?”  I’ll tell you what the big deal is:  I am a self professing lover of all things French toast and this recent discovery was a revelation to me (cue in the dramatic music).   How is it possible I have never tried this amazing variation of one of my most favorite foods?  I tell you, it’s a great mystery.  If you love French toast like I do, you are going to love this recipe! Spinach Ricotta Quiche

Spinach quiche is one of my favorite dishes to make for dinner.  <-Yes, you heard me right.. dinner.  I love quiche because its basically fool-proof to prepare, satisfying to eat, and I always have ingredients on hand to make one.   By using store-bought pie-crust, preparing quiche is rather simple and quick.  It takes me about 10 minutes to prepare, pretty slick.. huh?

Today I am going to share with you one of my favorite variations of quiche made with spinach and ricotta cheese.  Most quiches call for Swiss cheese but I typically use whatever type of cheese I have on hand.  With that said, this means my quiches are made with Cheddar as well.  Although I do love homemade pie crust, I find the pre-made store bought kind pretty good to use, not to mention convenient.  [click to continue…]

Alice’s Blueberry Muffins

I love blueberry muffins. I don’t know if it’s possible to love them too much but nevertheless, nothing beats homemade blueberry muffins – wouldn’t you agree?  Last Thursday my baby boy, Eli, turned two years old. Because we had just returned from a week long trip days before his birthday, we decided not to have a birthday party. Instead, I made these yummy blueberry muffins for his birthday and stuck a candle in it.

What I love about blueberry muffins is the denser texture and how less sweet they are compared to cake.  I used frozen blueberries and all the other ingredients I typically have on hand.  I love spreading a little pat of butter on them before biting into it with bursts of sweetened berries to savor.  This recipe also has a little bit of lemon zest and juice.  The lemon flavor is subtle but enough to compliment the blueberries in the most delightful way.  I also add a little bit of turbinado (raw sugar) on top of each muffin before baking for a nice little crunch.  You could easily substitute white sugar crystals. Mango Orange Smoothie

I am a smoothie junkie. It’s no secret and I have no shame. Most mornings I’m in such a hurry to get my kids to school I will make myself a smoothie to go and drink my breakfast this way. One of my favorite types of smoothies is my own version of Starbucks Orange Mango Vivanno with protein powder. Its super easy to make and so delicious to drink. Its the perfect amount of citrus and tang to get me going and allows me to start my day without starving through the morning. I love this smoothie and I think you will too! [click to continue…]
