Spinach Ricotta Quiche

by alice on April 28, 2010 · 32 comments

[donotprint]Spinach quiche is one of my favorite dishes to make for dinner.  <-Yes, you heard me right.. dinner.  I love quiche because its basically fool-proof to prepare, satisfying to eat, and I always have ingredients on hand to make one.   By using store-bought pie-crust, preparing quiche is rather simple and quick.  It takes me about 10 minutes to prepare, pretty slick.. huh?

Today I am going to share with you one of my favorite variations of quiche made with spinach and ricotta cheese.  Most quiches call for Swiss cheese but I typically use whatever type of cheese I have on hand.  With that said, this means my quiches are made with Cheddar as well.  Although I do love homemade pie crust, I find the pre-made store bought kind pretty good to use, not to mention convenient.  [click to continue…]

Scalloped Potatoes Au Gratin

by alice on March 29, 2010 · 18 comments

Our household has been quite busy lately. Last week we began hosting a high school student from Japan. Hikari is only here for one more week and you know what that means? Only one more week of preparing and serving “American” food to enrich her cross-cultural experience with us. So far we’ve been serving typical types of American comfort food including this simple but wonderful scalloped potato au gratin dish. Made with heavy cream, shredded cheese, potatoes, and a few other ingredients for seasoning, this side dish imparts love with every bite. Typically this dish is served during Holiday meals and with Easter approaching it would make a lovely addition to your Sunday dinner. But don’t feel like you have to wait for a holiday to prepare scalloped potatoes, this comforting side dish would be a great addition to any supper. [click to continue…]

Bourbon Croissant Bread Pudding Recipe

by alice on December 24, 2009 · 11 comments

[donotprint] I am happy to share with you one of my favorite breakfast dishes, Bourbon Croissant Bread Pudding.  The first time I tried this was earlier in the year after discovering it SuperChef’s, Mirch Masala‘s site.  She adapted the recipe from Nigella and let me tell you, it’s a keeper.  This dish is indulgent in every way.  Buttery croissants, heavy cream, caramel sauce, and bourbon coming together for a special bread pudding suitable for any special breakfast or brunch.  Day old croissants work best and if you don’t have croissants, challah would be a great substitute.  I made this croissant pudding with leftover croissants I bought in bulk at Sams Club.  Use what works for you and if you prefer rum, by all means knock yourself out.  And of course you can just omit any alcohol all together.  [click to continue…]

Breakfast Casserole Recipe

by alice on December 20, 2009 · 35 comments

[donotprint]

All the holiday cookies and treats have been baked. Presents still need
to be purchased, wrapped, and placed beneath the Christmas tree. It’s hard to believe that in just a few days my kids will be running to our family room at the crack of dawn to see what Santa brought them. I typically wake up around 6am to bake cinnamon rolls and make coffee so when the family wakes up the smell is permeating throughout our house.

From there I sneak back into bed and listen for the sound of feet running across our creaking hardwood floors towards our bedroom. The kids will be shouting at us with joy and excitement begging us to get up so they can open presents. From there, I go straight to the kitchen to pour my husband and I a cup of coffee, remove the cinnamon rolls from the oven and replacing it with our traditional Breakfast Casserole to bake. While we wait for our casserole, our family enjoys opening presents and eating freshly baked cinnamon rolls. This has been our tradition for the past 10 years and every year I look forward to it. I love a good casserole, don’t you?  You know what I love more?  When I get to eat a good casserole, especially when I’m not the one who prepared it!

A few years ago my husband (bless his heart) tried his hand at making a casserole.  You would have to know him to understand how thoughtful it was of him to do this.  Let’s just put it this way, cooking and baking is not something which comes naturally to him.  Eating what I bake and cook is entirely a different story.
