Chicken


One of my favorite easy weeknight dinners is chicken marsala. Made with sauteed mushrooms in a marsala wine sauce, this dinner has become a regular in our household for years. Typically I buy two chicken breasts and split them to make four pieces. This is a great method to stretch a few pieces of chicken out to feed more people. A couple years ago I would occasionally order Starbucks Chicken Curry Salad with Couscous when I hadn’t had lunch and needed a quick bite to eat.  I was sad when they discontinued making and selling this salad because it was one of my favorites.  Although I miss the salad, I don’t miss paying $5.50 for it!  Chicken Curry Salad isn’t hard to make at home either.  One large salad cost me $1.35 to make at home.  That’s a savings of $4.15!

This week I’m participating in the United Way Hunger Challenge and for lunch I prepared this salad for my husband and I.  Not only is this salad healthy, it is quite inexpensive to make.  One boneless chicken breast will make enough chicken salad for 4 servings.  Scooped and served on a bed of couscous and lettuce, this salad has become a favorite around here.  Here is my version of this popular recipe. Chicken Coconut Curry Soup

Ten years ago, my friend Ann made this soup for our family when we moved into our house.  This has become one of my favorite soups and I like to prepare when I’m in a jam and need dinner quickly!  It is quite easy, tasty, and perfect for a cold winters night.  The blend of coconut milk and red curry paste is the perfect combination for a Thai style soup without any fuss.  I will warn you though, it does have a nice kick to it.  It will warm your bellies and leave you feeling satisfied.  If you don’t like spicy food, just reduce the amount of curry paste to your liking. CasseroleDish

I love a good casserole, don’t you?  You know what I love more?  When I get to eat a good casserole, especially when I’m not the one who prepared it!

A few years ago my husband (bless his heart) tried his hand at making a casserole.  You would have to know him to understand how thoughtful it was of him to do this.  Let’s just put it this way, cooking and baking is not something which comes naturally to him.  Eating what I bake and cook is entirely a different story.
