As I write this my husband is downstairs putting away Christmas decorations, my kids are playing with their Christmas presents, and I’m still in bed enjoying a morning of sleeping in and reading in bed. It’s hard to believe it was exactly one year ago we were saying our final goodbyes to my dad as he lay at peace in a funeral home. Boy, what a year it has been.
For the last two weeks we’ve been hosting family, parties, and lounging. Christmas Eve with fifty extended family members, Christmas Day with my immediate family, and with no plans for New Year’s Eve other than to enjoy the presence of each other, I’m looking forward for this year of transitions and major life changes to close. This last week has been the most insane, chaotic, and exhausting week I’ve had in awhile. I wish I could report to you I had some exciting news to explain my lack of posting here or a thrilling new project which has been occupying my time. The truth is… life as a stay-at-home mom of three kids can sometimes zap all my energy and time, leaving none left to recharge and do the fun things I enjoy, like posting here and sharing with you. This week I’ve been in survival mode, attempting (and failing miserably) to keep my head above the busy waves of life. The reason this week has been so crazy is because we’re wrapping up the end of the school year tomorrow. This means every other activity my daughters are involved with are all finishing as well. We’ve attended end of the season parties, ceremonies and class picnics with more to come this weekend. This is on top of our already busy schedule. I’m whining and I know it – sorry. Full on exhaustion has kicked in. I’ve been averaging 4-5 hours of sleep each night trying to catch up on things and more importantly, comfort Eli. He’s been sick the last few days and when he’s miserable, I’m miserable. The poor little kid won’t eat, has a hard time sleeping, and has been clinging to my arms for comfort. Affogato is an Italian coffee dessert made up of a scoop of vanilla ice cream and a shot of espresso poured over. And let me tell you… it is absolutely divine. I have a confession -I’ve been drinking Eggnog lattes from home for a few weeks now. But being that today is Black Friday, the Christmas Holiday season has officially begun! Now I can share my favorite drink with you without shame. I love eggnog lattes but they can be quite expensive at Starbucks and elsewhere. Instead I prefer to make mine at home for a fraction of the cost. Although technically you need shots of espresso for the drink to be considered a “latte”, you can still make a faux latte by using super concentrated coffee (or instant coffee packs like Starbucks VIA). True story – Last year I fell crazy in love with Starbucks Signature Salted Caramel Hot Chocolate. Each day I would drink 2 of these bad boys as a treat to myself. My son was only 6 months old back then and I would have the baristas pour double shots of espresso into my drink. It was my guilty pleasure except I would call it more like therapy.
