There is a measure of giddiness I feel when a new cookbook arrives on my doorstep, especially when I know the author’s style of cooking and philosophy is similar to mine.  I just can’t wait to start cooking from it!   A few weeks ago Sterling Epicure (Sterling Publishing) sent me a review copy of Cristina Ferrare’s Big Bowl of Love: Delight Family and Friends with More than 150 Simple, Fabulous Recipes and it is a wonderful collection of recipes everyday home cooks will appreciate. Chocolate Pudding Cake Recipe

Chocolate Pudding Cake Recipe

A pudding cake is a definitively American, decidedly homey dessert, in which a cake batter is topped with some sort of syrup and then baked. In the alchemical atmosphere of the slow cooker, the cake part rises up through the syrup, or maybe it’s the syrup that sinks down through the cake. But at any rate, the exchange produces a moist, brownie-like cake resting on a swamp of chocolate pudding. To serve it, scoop up some cake with its pudding foundation and eat it with a spoon.
Ingredients
  • Nonstick oil spray
  • 1 cup flour
  • 2 tsp. baking powder
  • tsp. salt
  • 1 cup granulated sugar, divided
  • cup unsweetened cocoa powder, divided
  • cup milk
  • 1 tsp. vanilla extract
  • cup vegetable oil
  • cup dark brown sugar
  • 1 cup boiling water or coffee
Instructions
  1. Spray a 1½-quart soufflé dish with oil and set aside.
  2. Combine the flour, baking powder, salt, ¾ cup of the granulated sugar, and ¼ cup of the cocoa in a mixing bowl. Add the milk, vanilla, and oil, and mix into a stiff batter. Scrape into the prepared dish and smooth the top.
  3. Mix the brown sugar, the remaining ¼ cup granulated sugar, and remaining ¼ cup cocoa in a small bowl; sprinkle in an even layer over the top of the batter. Pour the boiling water or coffee over all.
  4. Set the dish inside a 6-quart slow cooker and cover the top of the slow cooker with a folded kitchen towel, and then with the cooker lid. Cook on high for 2½ hours, or until the top of the cake is set and the bottom is still syrupy.
  5. Cut into wedges or spoon onto plates, using the syrup on the bottom as a sauce

For the record, DESSERTS and NOT diamonds are a girl’s best friend.  It’s true -seriously. When I was sent a review copy of Fat Witch Brownies: Brownies, Blondies, and Bars from New York’s Legendary Fat Witch Bakery by Patricia Helding I instantly knew this cookbook and I were meant to be best friends, as in BFF – Brownies Friends Forevahhhh. Perhaps I cannot be objective when reviewing a cookbook entirely dedicated to brownies, blondies, and dessert bars because I am, in fact, obsessed with these sweet treats.  If this makes me biased, so be it…I don’t care.  I suppose in the spirit of being objective I could try convincing myself this cookbook isn’t’ as awesome as I really do think it is.  But why would I do that?!  I would be lying  to myself which means I would be lying to you. Bakerella Cake Pops Cookbook Giveaway!

I am very excited about today’s giveaway.  You see.. A few weeks ago I posted an incredibly easy, comforting, and satisfying recipe for roasted chicken legs and olives from Amy McCoy’s cookbook, Poor Girl Gourmet: Eat in Style on a Bare-Bones Budget.  The cookbook is filled with approachable recipes for home cooked meals with the cost of each dish broken down so you can learn to cook economically without having to sacrifice flavor or quality.  The premise of the book is to eat as well as you can for as little as you can – my kind of cookbook.

The layout of the cookbook is straight forward and easy to read with most recipes accompanied by beautiful photos Amy took herself.  I love her narrative head notes for each dish.  They read like a personal note from a friend.  As I previously mentioned, each recipe also has an estimated cost for a family of four.  When I made the roasted chicken dish as well as her polenta from the cookbook, I found the estimated cost to be very close to what I spent and very helpful in determining our food budget for the week.
