Some days all I want to do is be completely lazy. And let me tell you, laziness has its privileges. Spending the entire day in my pajamas, sleeping in, and selfishly setting aside my normal routine in order to experience the type of instant gratification becoming of a six year old child. Yep, that was me the other day, except without the tantrum but complete with dancing to Beyonce’s Crazy in Love (booty shake included) while kicking my daughters’ butts in Wii’s Just Dance 2. I held no prisoners and proved once and for all, I still got game. No…. not really. I can’t dance. But the three of us had a lot of fun with my oldest daughter commenting how surprised she was with my moves. I’m still trying to figure out if she meant that as a compliment or as an insult. [donotprint] I wish the combination of chocolate and peanut butter wasn’t so perfect together. My life would be so much easier if I were not tempted by these peanut butter kiss cookies the girls and I made the other night. You know I have a problem when I’ve eaten so many, I bake another batch while the girls are at school so I won’t be interrogated for missing cookies later when they get home. The other issue I have with these cookies is how easy it is to eat one, grab another, and before you know it, I’m caught in an addictive cycle of eating these cookies! It’s ridiculous!

Making these cookies are just beginning of our holiday baking. A cookie tray just isn’t complete without this classic cookie which for some reason seems to only appear around Christmas time. The girls and I love making these cookies because the dough only takes minutes to make and we always have fun pressing each Hershey’s Kiss down on each freshly baked peanut butter cookie right when they come out of the oven. The kids think I don’t know that they take a few Kisses plop them in their mouths when I’m not looking, but trust me… I know. It’s all good. [click to continue…]

[donotprint] Destiny does not keep track of time. When the time comes for fate to make herself known, one cannot argue with her. Sometimes destiny and dessert collide, and I love it when this happens. It’s after midnight and I am cleaning out some drawers. I hate cleaning – not as much as I hate doing dishes or laundry but it’s up there high enough which makes it worth mentioning. Whenever I feel unmotivated to clean (something I loathe doing so much), I look for distractions or start new projects just to avoid having to face reality. This is called denial. So here I am, in my dirty, flour dusted clothes baking Fat Witch Bakery’s Congo bars made with a buttery graham cracker crust and topped off with a sticky, sweet, gooey, coconut-pecan-chocolate chip topping -kind of like a seven layer bar. And in case you’re wondering why I mentioned destiny and fate, you would have to understand how remarkable it truly is to be out of so many pantry ingredients, including white sugar, yet have just enough of all the ingredients I need on hand to bake such a memorable midnight treat. The chances of this happening in my kitchen is 1 in a gazillion.
An hour ago I was thinking I should finish putting away everything I had taken out of the drawers but then I decided my time would be far better spent baking brownies. Wouldn’t you agree? [click to continue…]

Take a good look at these adorable chocolate covered ghost pretzels. Aren’t they cute? Not only are they fun to look at, these pretzels are super easy to make in no time. I was inspired to create these sweet and salty treats for today’s PBS Parents Kitchen Explorers post on “Creative Halloween Snacks and Treats” article.
