Taco Seasoning

The last ten months has been a roller coaster of emotions, major life changes, and everything in between.  We bought a new home and sold our old one.  The girls started school and my youngest child started his first year of preschool two days a week for two hours a day.  Add soccer practices, games, swim team commitments, play dates, and other family outings, by 10 p.m. I’m exhausted. By the time I get the kids to bed the only thing I want to do is watch Mad Men while eating ice cream.

Not a day goes by when someone doesn’t ask me how the unpacking and settling into our new home is going.  The truth is, most of our things are still in boxes in the garage.  My husband jokingly told me we should just donate all the boxes to charity and start over.  I thought he was so silly for even suggesting this in jest a month ago but the idea is becoming more tempting by the day.  Living out of boxes does have its privileges.  Our house remains pretty clean because there really isn’t much to mess up.  Eli’s toys are confined to a 18×18-inch box and most of the rooms are essentially empty.  The great thing about living in an empty house is letting the kids and their friends literally run around in circles.  I’ve also enjoyed cooking in my new kitchen, much more so than our old house. Easy Guacamole Recipe

Yesterday I showed you how to make an easy pico de gallo. Today I’m introducing you to her cousin, easy guacamole. What I love about this recipe is the fact you basically make pico de gallo and add some to mashed ripened avocados. I told you it was easy! It’s like getting 2-for-1. And the guacamole is good…. really good.

Easy Pico De Gallo Recipe

[donotprint] I used to buy fresh pico de gallo at our local grocery store until I read the ingredients label and discovered it was pretty easy to make at home.  In fact, all you need are a few ingredients chopped up and voila, you have pico de gallo.

DIY: Easy Baked Tortilla Chips Recipe

Last week I bought a big bag of corn tortillas.  I was lured in by the fact they were on sale.  After eating tacos for a few days I wanted to use them up before throwing them out.  As a result, I made baked tortilla chips.  They were ridiculously easy to make and our whole family loved them!  This is a great way to use left over tortillas for nachos, salsa, or snacking.  So if you find yourself with more tortillas than you know what to do with, here is a great recipe for you with step by step photos! Today is the first day of the United Way King County Hunger Challenge. This morning I decided before I even got out of bed that I needed to make a decision about being flexible or anal on how our family would eat. I could make the family stick to the meal plan or I could just do what I always do and go with the flow. I decided to go with the flow.
