Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients
  • 1¼ cups raw (turbinado) sugar
  • ½ cup unsalted butter, softened
  • ½ cup chunky peanut butter *do not use natural oily peanut butter. JIF or Skippy is good
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup old fashion oats
  • 1 cup all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • ¾ teaspoon kosher salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Using an electric hand or stand mixer, cream the sugar, butter, peanut butter, egg, and vanilla extract until well combined.
  3. Add the oats, flour, chocolate chips, salt, baking soda, and baking powder.
  4. Mix all the ingredients until the chocolate chips are evenly distributed throughout the dough and the dough has pulled together. You should not see any visible flour.
  5. Using a medium (approx. 1½ tablespoons) cookie scoop, scoop mounds of cookie dough 2 inches apart on a baking sheet lined with parchment paper or a silicon mat.
  6. Using the bottom of a flat cup or your hand, gently flatten each mound so the cookies are approximately ¾-inch tall.
  7. Bake for 13-15 minutes until the cookies are golden brown on top and center is somewhat firm to the touch. Remove the cookies from the oven and set them on a heat safe counter or on top of the oven burners.
  8. Allow the cookies to cool on the baking sheet for 15 minutes before removing.
