Deep-Fried Nutella Banana Wontons

Good morning!  Hope you all had a lovely weekend.  Today I have a special treat for you.  I will warn you in advance that you will either love me or hate me for these.  Perhaps even both.  But trust me, these lovely Nutella Banana Wontons are worth the love-hate relationship.  Deep-fried to a crispy, golden perfection, these morsels are like potato chips, you can’t eat just one.  Trust me, I tried.  I stop counting after I ate five.  But I am proud to say I didn’t eat the whole batch but instead shared them with visiting family and together they disappeared in five minutes. Caramelized onions… need I say more?  What’s a girl to do when she has a package of puff pastry staring at her each time she opens the door to her freezer?  Well my friends, it’s your lucky day because I’m about to share with you an onion tart fancy enough to serve at your next dinner party and simple enough to enjoy at home any day you’d like.

There is something magical about caramelized onions.  It reminds me of the stages of a caterpillar turning into a butterfly.  With the help of butter and a few seasonings regular yellow onions transform into a soft heap of golden goodness.  Can I get an Amen?! Who am I kidding, I’m preaching to the choir..you all already know how good caramelized onions are – my apologies.  Adding them to a puff pastry base with a thin layer of ricotta cheese, this tart is a great one to add to your arsenal of versatile recipes to have on hand for any occasion.  [click to continue…]

Pesto Rolls

Seriously, who doesn’t love garlic bread?  Now let me ask you this, who wouldn’t love a savory yeast bread dinner roll made with pesto and Parmesan cheese?  That’s what I thought.  I modified my cinnamon roll recipe into a savory version filled with garlic, basil, cheesy goodness.  All kidding aside, we really love these rolls.  There is something special about fresh baked bread right out of the oven but when you add pesto swirled inside a roll, it takes it up several notches.  The aroma of pesto and fresh bread is heavenly. Can life get any better?  Our family loves these rolls and I know yours will too. [click to continue…]

Bacon Wrapped Water Chestnuts

One of my favorite appetizers is bacon wrapped water chestnuts.  There is something about bacon and the crunchiness of water chestnuts – that when they come together is like a “party in your mouth”.  Some may call this popular appetizer “trashy”, but who cares?  It may not be the most gourmet appetizer on the table but I can guarantee you it will be one of the first appetizers to disappear.  Trashy -  Smashy – It’s all good.

If you’ve been following me this week than you know I’ve been participating in the United Way Hunger Action Week Challenge.  Today on a whim I created this recipe for Cilantro Pesto using a few inexpensive ingredients  I purchased for the Hunger Challenge.  The end result was amazingly flavorful.  In fact I plan on making this pesto on a regular basis I love it so much.
