
I am going to be real and raw with you tonight. I’m a desperate woman this evening. I am in dire need of a late night sweet thang (<-and no that is not a typo). If you are familiar with my blog at all, I ask for your forgiveness in advance. There will not be the usual food porn you are accustomed to seeing on my blog in this post. I replaced my original photo with this one because frankly I’ve come to my senses and food porn is only good porn when shot right. When I say food porn, I mean a term used by food bloggers describing drool worthy photos of food. Instead I am posting candid photos as it happened. But I have a feeling you’ll forgive me after making this special treat. Don’t you agree this is a much better photo? Doesn’t it make you want to eat it through the screen?

Who can resist a freshly baked apple crisp? If you can see from the picture above, my 17 month old son Eli sure couldn’t. As I was arranging the food on the table to take pictures of one of my favorite Fall desserts, I briefly walked to a different room to grab my camera. When I returned, guess who I found picking away at my cranberry apple crisp!?! BUSTED! Honestly it was the funniest and sweetest Kodak moment. I started laughing and started taking pictures of the whole thing. Who could blame the little guy because what is Fall without a great recipe for apple crisp?
Earlier this week my friend Jen had tweeted about making a cranberry apple crisp with dried cranberries. I mentioned to her that I’ve used canned cranberries with great success. Twelve years ago a friend taught me how to make a cranberry apple crisp using a can of cranberry sauce and since then it has become one of my “Go-To” desserts. Every time I make one it’s always a hit at family gatherings. Now days instead of a can of cranberries, I use fresh cranberries which have been reduced with orange juice and sugar. Fall is in full swing in Seattle and in our household. Last night we put a few logs in our wood stove and made a batch of our favorite spiced hot apple cider. I love this recipe because its simple to make yet so good to drink. And for a grown up version, I poured a shot of spiced rum into my husband’s glass which really made for a a delightful warm Fall type cocktail. [click to continue…]

The May Daring Bakers’ challenge was hosted by Linda of make life sweeter! and Courtney of Coco Cooks. They chose Apple Strudel from the recipe book Kaffeehaus: Exquisite Desserts from the Classic Cafés of Vienna, Budapest and Prague by Rick Rodgers.
This strudel is my first baking challenge as a Daring Baker and let me tell you, it was a labor of love. The past few weeks I have been hesitant to start this project because of the work involved with stretching the dough paper thin. We love Sunday mornings around here. It is truly the only day of the week most everyone sleeps in. My son however has not learned the “sleeping in” on Sunday ritual. So when he gets up, I get up. I start the day making myself a cup of coffee and start baking. This morning I decided to bake an apple coffee cake.
