How to Make Iced Tea

Thank you to whomever reminded “Summer” to finally grace herself in the city of Seattle. C’mon… it’s ridiculous when I’m wearing my down coat and it is the month of July. The Fourth of July was gray, cold, and wet – no surprise there. But imagine how surprised I was to wake up to sunshine yesterday. In fact, the weather rose to 79 degrees! In Seattle, this is considered “unbearably hot”. My husband flipped the switch to our portable air conditioner standing tall in our dining room and the kids spent little time getting their swim suits on to play with the garden hose outside.


I interpreted the sunshine to be an invitation to make a pitcher of coconut mango iced tea. I’m so glad it did because today it’s suppose to be almost 90 degrees and I still have half a pitcher left. [click to continue…]

How to Make the Perfect Mint Julep

Today is the official day of summer. Today we’re kicking off the season with a backyard barbecue and I’m hoping to enjoy one of many long evenings of brilliant sunsets setting the night sky ablaze while sipping on a mint julep. Sounds lovely, doesn’t it?

Mint juleps are considered a Southern cocktail beverage made from bourbon, mint, sugar and water. It is a traditional drink often served at the Kentucky Derby in a tall glass or a pewter julep cup.

What I enjoy most about this beverage is the simplicity of it. We have mint growing like weeds in our backyard. So having all the ingredients readily available makes it very easy to prepare this cocktail on a hot summer day. Dissolving sugar and water into a simple syrup is the best way to prepare this drink. I like to take it one step further by steeping mint leaves in the syrup instead of muddling the mint leaves with ice. The end result is a sweet, refreshing, and strong cocktail! [click to continue…]

{Holiday Cheer} Eggnog Latte Recipe

I have a confession -I’ve been drinking Eggnog lattes from home for a few weeks now. But being that today is Black Friday, the Christmas Holiday season has officially begun! Now I can share my favorite drink with you without shame. I love eggnog lattes but they can be quite expensive at Starbucks and elsewhere. Instead I prefer to make mine at home for a fraction of the cost. Although technically you need shots of espresso for the drink to be considered a “latte”, you can still make a faux latte by using super concentrated coffee (or instant coffee packs like Starbucks VIA). thaiicedcoffee21For some reason today I was craving Thai iced coffee but ever since we replaced our broken coffee maker for an espresso machine, I’ve had to adapt my specialty coffee drinks into specialty espresso concoctions.

Today was the first time I tried making an iced Thai latte.  I was so proud of myself because it turned out so well.  A while back I purchased a bag of whole cardamon pods and have enjoyed discovering new and different ways to use them.  Today I used them to spice up my afternoon, literally.

Although I found several iced Thai coffee recipes on the internet, there were none for lattes.  So I decided to come up with my own.   Both my husband and I are so glad I did.  I hope you will be too. Enjoy! [click to continue…]
