I love this time of year when Seattlites enjoy the last warm days of summer yet the smell of Fall is clearly in the air. Already I am compiling a mental list of Fall-type of desserts I would like to try. Having been the lucky recipient of Italian plums from my neighbors tree, I decided to bake an Upside Down Plum Cardamom cake. I thought the cardamom would compliment the plums nicely and yet add enough spice to make this the first of many fall desserts soon to come. This cake did not disappoint and was devoured very quickly when served. breakfast-pancakeThis morning I woke up at 6am to a quiet house. Everyone was still fast asleep giving me just what I needed to make my husband a manly breakfast pan”cake”.  The result was a fun breakfast for everyone.  So Happy Father’s Day to all you papas out there!

Recipe for Breakfast Pan”cake”

4 – 8″ pancakes

1 cup of whipped cream

1 cup of sliced strawberries

1.5 cups of roasted potatoes

1.5 cups of scrambled eggs

1 lb. of cooked bacon

Instructions:

Lay the first pancake down on a plate or serving platter. Add a layer of roasted potatoes all the way to the edge. Add another pancake and add the scrambled eggs. Add the third pancake and add your bacon. Add the final pancake. At this point if everything is cold, you will want to microwave everything for 3 minutes right before serving. Top off with strawberries and whipped cream and serve immediately. Enjoy!!

Cut carefully just like a slice of cake.

The slice will not likely stay intact but still doesn’t take away the specialness of its presentation. Serve with butter and maple syrup!

Happy Mother’s Day to all the moms reading!  This morning I was gifted a morning of sleeping in, almost.  My husband and daughters came in singing a Happy Mother’s Day song carrying a baking sheet with breakfast on top.  It was so fun watching their faces and they had fun watching mine.  My husband prepared a fabulous meal of bacon, eggs, salsa, kiwi, and toast.  [click to continue…]

breakfastwrap2My kids love Breakfast Burritos and Quesidillas made with cheese, eggs, and tortillas.  My husband and I prefer more fillings and I call ours “Deluxe Breakfast Wraps”.  These make great to-go meals when you need to eat on the run and are unbelievably fast to prepare with no need to scramble eggs in a pan.  A plain burrito wish cheese and egg costs about $.50.  The Deluxe wrap runs about $.98.  I’ll break down the cost in the end.  But for now Here is the recipe.
