
Today I would like to share a super easy no-bake Christmas treat with you. It is so easy even a 2 year old can make them – I kid you not. Back in 2003 when our kitchen also was our laundry room too, I captured this video of Abigail (now 8.5 yrs old) making chocolate covered pretzels dipped in crushed candy cane. She was only 2 years old and was the most adorable helper, ever! I love peppermint bark for so many reasons. It is one of my favorite Christmas recipes because of how simple it is. In fact, my daughters made this last batch with my supervision and I must say… they did a fabulous job! In fact I think their bark looks better than Harry and David’s, Williams-Sonoma, and Neiman Marcus’ because it is homemade and made with 100% love.
Some peppermint bark recipes only use white chocolate but I prefer the combination of both brown and white. If you are looking for an easy to make Holiday treat to make as gifts or to have on hand when guests come over this is a great recipe for you – freezes well too. [click to continue…]

I have a confession -I’ve been drinking Eggnog lattes from home for a few weeks now. But being that today is Black Friday, the Christmas Holiday season has officially begun! Now I can share my favorite drink with you without shame. I love eggnog lattes but they can be quite expensive at Starbucks and elsewhere. Instead I prefer to make mine at home for a fraction of the cost. Although technically you need shots of espresso for the drink to be considered a “latte”, you can still make a faux latte by using super concentrated coffee (or instant coffee packs like Starbucks VIA). A few years ago I started a tradition of making sweet potato pies instead of pumpkin for Thanksgiving and Christmas dinners. I can’t remember my reasoning behind the decision except for a deep desire to go against the “traditional” favorite. After all, my brother is the one usually assigned to bring a pie and its a well known fact this means “Costco”. And for the record… I think Costco pies are not bad – just over played.
This sweet potato pie taste very similar to pumpkin except the texture is slightly denser and the flavor richer. Because sweet potatoes are already naturally sweetened, this recipe uses less than a cup of brown sugar. As a result the pie filling is not overly sweet – instead I find the sweetness just perfect. A few Christmas’ ago, my sister was telling me about these cookies she made for a cookie exchange using saltine crackers. The moment she used the word saltines, she lost me. However, because she has good culinary taste buds (it must run in the family) I thought I would give it a go and make them for myself to try.
