Chicken Coconut Curry Soup

by alice on January 6, 2010 · 23 comments

Ten years ago, my friend Ann made this soup for our family when we moved into our house.  This has become one of my favorite soups and I like to prepare when I’m in a jam and need dinner quickly!  It is quite easy, tasty, and perfect for a cold winters night.  The blend of coconut milk and red curry paste is the perfect combination for a Thai style soup without any fuss.  I will warn you though, it does have a nice kick to it.  It will warm your bellies and leave you feeling satisfied.  If you don’t like spicy food, just reduce the amount of curry paste to your liking. Last weekend we celebrated my daughter’s 8th Birthday with a house filled with girls, Hannah Montana, and food fit for a princess. When deciding on a menu my daughter requested her favorite dish, coconut chicken tenders. Who could blame her? Each tender is dipped in sweetened egg batter, coated with a panko coconut mixture and pan-fried to perfection. [click to continue…]

I love days like today in Seattle.  Blue skies, not to cold, but not to hot.  You can get away with wearing flip flops and ordering an iced latte all within the rules of acceptability for a living here.  Because the weather around here has been so unpredictable I appreciate a nice day like today even more because I know it will not last.  I’m not sure what it is about a beautiful sunny day, but they always command a need in me to grill.  One of my favorite dishes to bbq is chicken satay.  I love the flavors of cardamon, lemongrass, and ginger (to name a few) infusing the meat and transforming the tender grilled chicken into something spectacular.  [click to continue…]
