Watermelon Mint Lime Martini

I’ve never been one to make a cocktail for the reason of “just because.”  But today I’m making an exception because there was half a baby watermelon in my fridge which needed to be used up.  Instead of eating it I felt like making a drink out of it, and let me tell you what a fine drink it is.

Made with vodka and not gin or vermouth, I’m still calling this cocktail a watermelon mint lime martini because… because I feel like it.  And if I sound a little sassy, it’s because I am.  Today was a rough day and I’ll just leave it at that.

I wasn’t planning on writing a post about it but after taking a small sip, I changed my mind because you really  need to make one this weekend if you’re a cocktail type of person.  [click to continue…]

Oh Cracker Jacks! Recipe for Caramel Popcorn

Saturday night I had a special “Mommy-Daughter Night” with my 6yr old daughter. Her older sister was at a friend’s house and I took the rare opportunity to just have one on one time with my youngest daughter who also happens to be the “middle child”. She was so excited for special date night with mom! But if truth be known, I think I was even more excited to spend time with her. What I love about my daughter is her enthusiasm to bake and cook. She loves to just jump in and take ownership of any type of baking/cooking project and Saturday night was no different. breakfast-pancakeThis morning I woke up at 6am to a quiet house. Everyone was still fast asleep giving me just what I needed to make my husband a manly breakfast pan”cake”.  The result was a fun breakfast for everyone.  So Happy Father’s Day to all you papas out there!

Recipe for Breakfast Pan”cake”

4 – 8″ pancakes

1 cup of whipped cream

1 cup of sliced strawberries

1.5 cups of roasted potatoes

1.5 cups of scrambled eggs

1 lb. of cooked bacon

Instructions:

Lay the first pancake down on a plate or serving platter. Add a layer of roasted potatoes all the way to the edge. Add another pancake and add the scrambled eggs. Add the third pancake and add your bacon. Add the final pancake. At this point if everything is cold, you will want to microwave everything for 3 minutes right before serving. Top off with strawberries and whipped cream and serve immediately. Enjoy!!

Cut carefully just like a slice of cake.

The slice will not likely stay intact but still doesn’t take away the specialness of its presentation. Serve with butter and maple syrup!

Today while driving it dawned on me that graduation season is upon us. I was trying to think of some creative ways to encourage not only graduates but anyone and everyone. For some strange reason fortune cookies popped into my head. The more I thought about it, the more I really liked the idea of making my own fortune cookies and filling them with words of encouragement. Seriously have you listened to the news lately?
