Creamy Mashed Potatoes

Praise the Lord for the gift of mashed potatoes! Can I get an Amen?! The only thing better than mashed potatoes are mashed potatoes made with lots of butter and cream and whipped into a creamy delicious side dish which can only be described as heavenly.

Thanksgiving Day wouldn’t be complete without plenty of mashed potatoes for everyone to enjoy, especially when we all know everyone likes to go back to the serving table for seconds and thirds. I’m convinced my kids believe my mashed potatoes are the main dish and the turkey is the side. In fact, when we serve mashed potatoes family style, I often need to remind them to only take one or two scoops so everyone gets at least one serving –otherwise the only thing they would ever eat is mashed potatoes.

Steamed Clams in White Wine

When it comes to clams there are only two camps.  You either really really love them or you really really hate them.  As for me I love clams – always have, always will.  Growing up in the Puget Sound we would go clam digging as kids spending hours looking for those suckers.   At the end of the day my mom would prepare our loot by steaming clams and us kids would slurp the savory broth till the lost drop.  We would collect all the empty shells, wash them (or not wash them), and store them in a secret box as our treasure.  Those were the good old days.  Last time I went clam digging was with my husband before having kids.  Lets just say it wasn’t as nearly as fun as I remember as a kid, but eating them these days is just as comforting and delectable. Scalloped Potatoes Au Gratin

Our household has been quite busy lately. Last week we began hosting a high school student from Japan. Hikari is only here for one more week and you know what that means? Only one more week of preparing and serving “American” food to enrich her cross-cultural experience with us. So far we’ve been serving typical types of American comfort food including this simple but wonderful scalloped potato au gratin dish. Made with heavy cream, shredded cheese, potatoes, and a few other ingredients for seasoning, this side dish imparts love with every bite. Typically this dish is served during Holiday meals and with Easter approaching it would make a lovely addition to your Sunday dinner. But don’t feel like you have to wait for a holiday to prepare scalloped potatoes, this comforting side dish would be a great addition to any supper. [click to continue…]

Yesterday I posted my review of Ree Drummond’s cookbook,”The Pioneer Woman Cooks: Recipes from an Accidental Country Girl” officially being released today.  (Yay REE!!!)

Today I would like to share with you her recipe for “Skillet Cornbread”.  I made this a few days ago and with as much enthusiasm as I can muster, can I just say.. OH MY WORD!?!

Today is the second day of the month and you can definitely tell its Fall in Seattle. Leaves in hues of red, yellow, orange, green, and purple blanket the streets and sidewalks like a patchwork quilt straight from heaven. The cold crisp air is a beautiful reminder Fall has arrived and all of its glory.

So yesterday I couldn’t help myself but prepare an acorn squash with its own brown sugar butter sauce. What I like about this recipe is how simple it is. All though it is slightly sweet, the sugar doesn’t over power the squash but just adds enough sweetness to make it so good. [click to continue…]
