Marshmallow Fruit Dip

Have you ever been to a party where the host served fruit with a gooey, sweetened cream?  Chances are you were eating fruit dip.  This creamy dip looks like whipped cream but is much sweeter, thicker, and denser.  This particular recipe is my go-to fruit dip recipe because its simple, easy, fast, and always popular at brunches, potlucks, and showers.  With Valentine’s Day just a few days away I thought I would share this great dessert idea you can pull together within minutes.  This recipe only requires two ingredients and perfectly pairs well with strawberries.  [click to continue…]

Chocolate Covered Strawberries
Ten years ago today, I said “I do” to my husband Rob.  Three kids later, we are still laughing, encouraging each other, and closer than ever.  I had planned on baking a small anniversary cake but in light of what is happening in Haiti, my mind has been scattered with images and stories from this devastated country. What would summer be without strawberry shortcakes? I love everything about this classic summer treat from the sweetened vanilla whipped cream, local strawberries picked when perfectly ripened, to the melt in your mouth cream shortcake biscuits themselves. Making homemade shortcakes are far better than anything you could buy in the store.

For this recipe I used my favorite cream scones recipe but instead made them into shortcake biscuits. I whipped and sweetened my own cream because canned whipped cream cannot compare. Along with fresh sliced strawberries, I also added a tablespoon of homemade strawberry sauce. When everything was assembled, it was almost too pretty to eat, almost. breakfast-pancakeThis morning I woke up at 6am to a quiet house. Everyone was still fast asleep giving me just what I needed to make my husband a manly breakfast pan”cake”.  The result was a fun breakfast for everyone.  So Happy Father’s Day to all you papas out there!

Recipe for Breakfast Pan”cake”

4 – 8″ pancakes

1 cup of whipped cream

1 cup of sliced strawberries

1.5 cups of roasted potatoes

1.5 cups of scrambled eggs

1 lb. of cooked bacon

Instructions:

Lay the first pancake down on a plate or serving platter. Add a layer of roasted potatoes all the way to the edge. Add another pancake and add the scrambled eggs. Add the third pancake and add your bacon. Add the final pancake. At this point if everything is cold, you will want to microwave everything for 3 minutes right before serving. Top off with strawberries and whipped cream and serve immediately. Enjoy!!

Cut carefully just like a slice of cake.

The slice will not likely stay intact but still doesn’t take away the specialness of its presentation. Serve with butter and maple syrup!

Stawberry and Spinach Salad Recipe

I love days like today when the weather in Seattle is perfectly perfect.  Warm temperatures, blue skies, and not a care in the world except for the dilemma of what to eat for dinner. I decided to make a spinach strawberry salad as the main dish. I’ve had a love affair with this salad ever since I had at bridal shower 15 years ago.  The combination of sweet and tangy poppy seed dressing on torn spinach is the perfect dish to serve as a light and refreshing meal in itself or for potlucks, showers, and entertaining.  This salad always disappears first and is one of my most requested recipes by those who try it.
