One of the best aspects of late summer is the abundance of local ripe peaches and their many uses.  In our family I especially enjoy grilling them.  It’s simple to prepare not to mention how fancy they look plated.  This would make an excellent dessert to serve guests after a nice meal.  Topped with fresh ricotta cheese and a drizzling of a balsamic reduction, you will feel spoiled but appreciate how fresh and healthy this dessert is.  [click to continue…]

caprese

I love insalata caprese salad. I love everything about it, from the vibrant colors of each ingredient to how each element comes together for a delicious dish. Best of all is how simple this is to make but yet is stunning to look at when plated. Those are my favorite types of dishes to prepare! There is something deeply satisfying when I can create something at home in a few minutes yet feel like I’ve ordered it from a restaurant! What would summer be without strawberry shortcakes? I love everything about this classic summer treat from the sweetened vanilla whipped cream, local strawberries picked when perfectly ripened, to the melt in your mouth cream shortcake biscuits themselves. Making homemade shortcakes are far better than anything you could buy in the store.

For this recipe I used my favorite cream scones recipe but instead made them into shortcake biscuits. I whipped and sweetened my own cream because canned whipped cream cannot compare. Along with fresh sliced strawberries, I also added a tablespoon of homemade strawberry sauce. When everything was assembled, it was almost too pretty to eat, almost. icedtea

It is so hot outside I can hardly function. Almost 80 degrees outside and no air conditioning inside. At least I was somewhat productive by managing to get outside and water my garden while my kids enjoyed the sprinkler. I was so happy to see so my mint thriving I decided to make a pitcher of one of my favorite types of iced tea, jasmine-mint-lemon-honey-and green tea. Yes I know the post title doesn’t mention the lemon or honey, but it would have been too long to include them. But trust me, the lemon and honey are just as important as the tea bags themselves. If you don’t like jasmine, mint, or green tea you may be surprised by this recipe, especially on ice. Perfect for National Iced Tea Day tomorrow. It is a zinger! Enjoy. [click to continue…]
