Rocky Road Brownies Recipe

[donotprint] I love baking brownies. Each time I bake a batch I always bake a different variation based on what I have in my pantry. Yesterday was no different. All month I’ve had a bag of marshmallows staring at me each time I open up my cupboard. Then I had this “light bulb” moment. Why not bake a batch of Rocky Road brownies? I love rocky road ice cream, so I was pretty sure I would love rocky road brownies too. You know what? I DO!! So did my husband and our kids.

There is something magical when baking with mounds of miniature marshmallows which brings out the kid in me. The added crunch of chopped almonds and little bursts of chocolate chips makes this brownie special, fun, and indulgent all at once. [click to continue…]

Classic Oatmeal Raisin Cookies [donotprint]

Today I made a batch of these classic oatmeal raisin cookies for my husband because they are his favorite.  I adapted the classic Quaker Oats recipe,  made 1/2 a batch, and then I ate 6 of them.  I justified eating them by telling myself.. they’re whole grain, they have fiber, and its better than baking and eating the cake I wanted to.  My logic is very screwed up, but still.. at least I get to share them with you!

Puppy Chow Recipe – Muddy Buddies

I LOVE LOVE LOVE when some of the most yummiest treats are also the most easiest to make. Ten years ago my friend Nancy gave each woman in our small group a beautifully packaged container of Puppy Chow aka Muddy Buddies. This was the first time I had ever had this “crazy good” treat. From the first bite I was hooked but also intrigued by what it was made of. When she told me how she made it I couldn’t believe it because it was such an easy recipe yet the combination of all the ingredients produced such a wonderful taste. I will warn you though, it is very addicting. Batches of this stuff have been known to disappear within minutes in our home. Best of all, Chex now makes their rice and corn cereal Gluten-Free. Oh Cracker Jacks! Recipe for Caramel Popcorn

Saturday night I had a special “Mommy-Daughter Night” with my 6yr old daughter. Her older sister was at a friend’s house and I took the rare opportunity to just have one on one time with my youngest daughter who also happens to be the “middle child”. She was so excited for special date night with mom! But if truth be known, I think I was even more excited to spend time with her. What I love about my daughter is her enthusiasm to bake and cook. She loves to just jump in and take ownership of any type of baking/cooking project and Saturday night was no different. We rented a movie and instead of the usual buttered popcorn we usually make, together we decided to make caramel popcorn similar to Cracker Jacks. [click to continue…]

Last night I was being a bad desperate housewife. I was hungry, craving chocolate, and in dire need for a late night snack. Fortunately for me I found a box of graham crackers, marshmallows, and chocolate chips. Incidentally, did you know Honey-Maid now makes graham crackers pre-cut for smores specifically? Cool huh?

To make a long story short, I made Smores cookies using the broiler function in my oven. This is a great way to make your favorite camping treat eating it warm or cold. By broiling the marshmallows and chocolate, the marshmallow edges turn nice and golden brown similar to cooking them over a campfire with a nice crispy outer shell. [click to continue…]
