Truffle Sweet Potato Frites

- 1 large sweet potato, peeled
- ½ cup flour
- 1 quart peanut oil
- 2 teaspoons truffle salt
- fresh ground pepper
- ¼ cup chopped parsley
- Cut the sweet potato into match sized sticks.
- Place the potatoes in a bowl of cold water and soak for 15 minutes. Drain the potatoes and allow them to dry for 15 minutes on a kitchen towel.
- Add the potatoes to a zip lock bag and add the flour to coat them.
- Preheat a deep pot of oil to 350 degrees F.
- Fry the potatoes in small batches for 5-6 minutes. Remove the potatoes and place them on a cookie sheet lined with a paper towel.
- Allow them to rest for 3 minutes before frying again for 3 minutes.
- Salt them with the truffle salt and pepper. Garnish with parsley. Serve immediately.
