Smoky Ham Tomato Edamame Pasta

An easy pasta dinner made with ham, tomatoes, and edamame
Ingredients
  • ½ pound pasta (your choice), cooked al dente and drained
  • ½ pound cubed cooked ham
  • 2 tablespoons olive oil
  • 2 cloves minced garlic
  • 2 tablespoons balsamic vinegar
  • ½ cup cherry tomatoes, halved
  • ½ cup cooked edamame
  • ¼ cup chopped basil
  • salt and pepper
Instructions
  1. Cook ham in a dry pan on medium high heat for 3-5 minutes until you see charring on the sides of the ham, and set aside. In a large skillet, heat olive oil on medium heat. Add garlic and remove from heat immediately. Allow the garlic to gently cook for one minute. Stir in the balsamic vinegar. Add the pasta back to the pan and toss it with the tomatoes, edamame, and basil. Season with salt and pepper to taste.
