Today I made a batch of Oatmeal Peanut Butter cookies. If you love Nutter Butters (and who doesn’t?) and/or Girl Scouts’ Oatmeal Peanut Butter Cookies (aka Do-Si-Dos), YOU WILL LOVE THESE COOKIES! These cookies are a hybrid of both types of cookies. I’ll warn you up front that these cookies are L E T H A L! I guarantee you that one bite will give you a cookie experience to remember. They will command the attention and affection of all who eat it and in return you will be heaped with praises.
My friend Emily who doesn’t even like creme filled cookies puts it like this, “These are a slice of heaven.” You had to have been here when she was eating these cookies because her daughter was trying to talk to her but Emily Shhh’d her for the sole purpose of eating her cookie in silent reverence. My friend Debbie had an even funnier response. After taking a bite, she said that these cookies were the “Oh Honey, I’m sorry I crashed your truck” type of cookies. It would only seem appropriate the originial creator of these cookies be sainted.. unfortunately it isn’t me. Nevertheless I am thankful because these are my new favorite cookies (for now).
- ½ cup unsalted butter, softened
- ½ cup peanut butter
- ½ cup white sugar
- ½ cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup quick cooking oats
- ¾ cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- 3 tablespoons unsalted butter, softened
- 1 cup confectioners' sugar
- ½ cup smooth peanut butter
- 2½ tablespoons heavy whipping cream
- Preheat the oven to 350 degrees F.
- In a large bowl, cream together the butter,peanut butter, white sugar, brown sugar, and vanilla. Add egg and beat well.
- In another bowl, combine the oats, flour, baking soda, baking powder, and salt. Add the dry ingredients to the creamed mixture.
- Mix the ingredients together until well combined.
- Using a cookie scoop, make uniform cookie dough balls. Cut each dough ball in half down the center. Take each half and roll them into a ball and place them onto a greased baking sheet, pressing each mound down with the palm of your hand to ¼ inch thick disks.
- Bake for 10 minutes, or until cookies are a light brown.
- To Make Filling: Cream the butter and confectioner's sugar, peanut butter, and cream together until well combined.
- Transfer the filling into a pastry bag or large ziplock bag (cutting the corner to make a make-shift pastry bag). Squeeze half approximately three teaspoons of filling onto the bottom sides of half the cookies. Top each filled cookie with the other half of the cookies bottom side facing down.
Do you think this recipe are like the ones sold by Girl Scouts in the 70’s and 80’s? Bought a box last week, not the same!

What a surprise to find these cookies. They were discontinued a few years ago by the Brownies ect who sold them door to door. I cannot wait to make some as the family often think about these cookies and how delicious they were. Thank you for the recipe. AT Canada

I have tried several of the Do Si Do’s recipes from on-line, because my daddy loves peanut butter . For Easter I wanted to make him a special peanut butter cookies. Well this one was far more better than any of the other recipes I found on-line. You can stop looking, this takes just as good if not better. You HAVE to use this one so stop looking. I doubled the batch and you might want to also.

I wanted to make a cookie for a Men’s Conference at our church and the first few dozen were too big to double up as a sandwich cookie so I sent those without the filling. However lucky me (and my kids) because the rest were perfectly sized with lots of delicious filling!!
Very delicious!! These are way better than the traditional peanut butter cookies in my opinion. Less fattening but more yummy! =) Will make these again and again.
These are truly amazing. Big hit for desert tonight. Used condensed milk instead of cream and worked great. Thanks for a great recipe!

I never keep cream on hand, what can I substitute for the cream?
I had my students make hundreds of these for Christmas cookie trays & our annual open house last week. Not only are they delicious, but they freeze beautifully, filled & unfilled.
