[donotprint] I’ve been light on posting recipes here the last couple weeks – sorry. Last week my children had the whole week off from school and every night we’ve been staying up far too late watching the Winter Olympics in Vancouver BC. I usually work on posting recipes after they go to bed but instead have been caught up in Olympic mania. Can you blame me? Each night we’ve been watching our favorite athletes compete and its been thrilling! As a parent of 2 young daughters who play sports all-year round, the Olympics get our full attention in our house.
But today I have a really simple and wonderful pasta recipe for you. It is made with penne pasta, spinach, bacon, and a few other ingredients. The flavor of the pasta is very light and seasoned just enough allowing the bacon and spinach to shine. This would be the perfect recipe for a weeknight meal or as a side dish. Enjoy! [/donotprint]
Spinach Bacon Penne Pasta Recipe
Ingredients:
16 oz package of penne pasta, cooked al dente
1/2 pound bacon, cooked and crumbled
3 large handfuls fresh spinach
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 cloves fresh garlic, minced
1/2 cup grated Parmesan cheese
Sea Salt and Pepper to taste
Directions:
In a large sauce pan, toss all ingredients in and cook on medium-high heat until fresh spinach is cooked. Season with salt and pepper. Enjoy!

thanks for the recipe – did it for dinner tonite and it was delicious! both of my kids enjoyed it too (one won’t eat greens and the other won’t eat bacon, so it was perfect for them, something for everyone. ahahah).

Ah yes…very familiar with Olympic mania here!!! My cooking has taken a bit of a nosedive. For good reason though…they don’t happen everyday!

I really like a pasta BLT! This would be great served alongside grilled chicken. All these flavors are really wonderful together! I don’t eat much pasta these days, but I will try this recipe coming Sunday.

I made this for dinner and it was FABULOUS! Of course being the true Southerner that I am, I had to tweak it to make it as fattening as possible. Instead of olive oil, I just cooked it all in the bacon grease and added a splash of heavy cream and some red pepper flakes. My family raved over it and I hid the leftovers for my lunch tomorrow!
