ONE’s Sweet Potato Day! Truffle Sweet Potato Frites

When you think of extreme global hunger, visions of children starving around the world probably come to mind.  When you think of what you can do to help, the issue at hand may seem so large, taking action may just seem like a drop of water in a very gigantic bucket.  It may disable you from taking any further action because it may not seem like there is any solution to this devastating problem.

Today we are celebrating Sweet Potato Day as a way to bring support and awareness to this important issue of global hunger.  ONE is a non-partisan and non-profit organization encouraging people like you and me to be a “drop” in the bucket with the hope that millions of “drops” will not only fill the bucket, it will cause the bucket to overflow on a political level.  ONE is a very influential lobbying group which brings the issue of global poverty to the nation’s capital and works with our leaders to continue their commitment to foreign aid.

Today, bloggers are sharing their favorite sweet potato recipes to bring awareness to this important issue.  I am invite you to join us and take action against global poverty.  ONE will never ask you for money.  They are merely inviting you to be an advocate and a voice for those who cannot speak for themselves.

    • High Level Messaging: Less then 1% of the US budget is       spent on foreign assistance. These funds are at risk and if these smart       programs are cut, millions could lose access to FOOD, medication and AIDS       treatment

    • Call to Action: Sign Petition

High Level Messaging: Nutrition is the hidden killer of nearly 2 million children around the world. The sweet potato is serving as the mascot for our cause and we’re going to make it famous! Packed with nutrition and blessed with the ability to grow in many places, the sweet potato is literally saving lives.

Truffle Sweet Potato Frites

Cook time:  25 mins
Total time:  1 hour 10 mins
Serves: 4
 
A delicious sweet potato frites (fries) recipe featuring truffle salt
Ingredients
  • 1 large sweet potato, peeled
  • ½ cup flour
  • 1 quart peanut oil
  • 2 teaspoons truffle salt
  • fresh ground pepper
  • ¼ cup chopped parsley
Instructions
  1. Cut the sweet potato into match sized sticks.
  2. Place the potatoes in a bowl of cold water and soak for 15 minutes. Drain the potatoes and allow them to dry for 15 minutes on a kitchen towel.
  3. Add the potatoes to a zip lock bag and add the flour to coat them.
  4. Preheat a deep pot of oil to 350 degrees F.
  5. Fry the potatoes in small batches for 5-6 minutes. Remove the potatoes and place them on a cookie sheet lined with a paper towel.
  6. Allow them to rest for 3 minutes before frying again for 3 minutes.
  7. Salt them with the truffle salt and pepper. Garnish with parsley. Serve immediately.
