Insalata Caprese Salad

Simple tomato basil mozzarella salad finished with a balsamic glaze

Servings: 4
  • 4 Vine ripened plum tomatoes sliced
  • 4 ounces fresh mozzarella sliced
  • 1/4 cup fresh basil leaves
  • 3 tbsp olive oil
  • salt and pepper
  • 3 tbsp balsamic glaze - recipe in instructions

Layer sliced tomatoes, mozzarella cheese, and basil leaves on a platter. Repeat. Drizzle olive oil and balsamic vinegar / balsamic reduction over your salad. Season with a pinch of salt and pepper. Enjoy! *Balsamic Brown Sugar Reduction Recipe 1/2 cup balsamic vinegar and 3 tablespoons of packed brown sugar Directions: Cook the vinegar/brown sugar mixture down on med-high heat until it is reduced by half, approximately 3 minutes. Remove from heat and allow to cool before serving.
