{Copycat – Clone} Starbucks Chicken Curry with Couscous Salad

[donotprint] A couple years ago I would occasionally order Starbucks Chicken Curry Salad with Couscous when I hadn’t had lunch and needed a quick bite to eat.  I was sad when they discontinued making and selling this salad because it was one of my favorites.  Although I miss the salad, I don’t miss paying $5.50 for it!  Chicken Curry Salad isn’t hard to make at home either.  One large salad cost me $1.35 to make at home.  That’s a savings of $4.15!

This week I’m participating in the United Way Hunger Challenge and for lunch I prepared this salad for my husband and I.  Not only is this salad healthy, it is quite inexpensive to make.  One boneless chicken breast will make enough chicken salad for 4 servings.  Scooped and served on a bed of couscous and lettuce, this salad has become a favorite around here.  Here is my version of this popular recipe. Chicken Curry Salad With Couscous

Inspired by Starbucks Chicken Curry With Couscous Salad (discontinued)

Serves 4

INGREDIENTS:

1 boneless chicken breast (1 lb) , cooked and chopped into small pieces * I use a food processor

1/3 cup raisins

1/3 cup almonds, chopped

1/3 cup celery, chopped

2 tablespoons curry powder

1/4 cup mayonnaise

pinch of salt and pepper to taste

2 cups cooked couscous

1 head of green leaf lettuce, washed, dried, and torn into pieces

Directions:

Combine chicken, raisins, almonds, celery, mayonnaise, curry powder until, salt, and pepper until completely mixed.  Place 1-2 cups of the torn lettuce on a plate and add 1/2 cup cooked couscous on top of it.  Finish it off with 1/2 cup of chicken curry salad mixture.  Enjoy!

Oh my! This looks delish. Unfortunately I wasn’t able to get this salad from my local Starbucks locations before they discontinued it! So to me this is, “Alice’s Curry Chicken Salad.” And knowing me, I’ll try this right away and let you know how awesome it is! :)

It’s back! At least it is at my Starbucks in Philadelphia. But not the same as the old version (which I had in Seattle), where it included almost equal parts chicken and mango. Anyhow, the new version has no mango but has added quinoa. And has way more couscous & quinoa than chicken. But — an even better idea to make it myself! Thanks!!

I made this for dinner last night and it is wonderful. I put it over rice and used cranberries instead of raisins. MMM. so good!

I used to work in Starbucks and we were taught how to make this salad. I have to say yours looks even nicer than the one we made. It has always been my favourite and I would have it almost for every lunch!

This is an ok recipie, but sadly, this tastes nothing even close to the Starbucks version!!! I used to eat this saled at Starbucks at least three times a week, it was my favorite saled, just totally delicious!!!

Why do restraunts allways discontinue their best salads, this drives me nuts! I still dream of this salad, thats how good it was!!!

Hi Lisa,
This recipe was developed during the hunger challenge and uses limited ingredients. Although it may not be exact, it is one of my favorite lunches to make at home.
