Peanut Butter Kiss Cookies

[donotprint] I wish the combination of chocolate and peanut butter wasn’t so perfect together.  My life would be so much easier if I were not tempted by these peanut butter kiss cookies the girls and I made the other night.  You know I have a problem when I’ve eaten so many, I bake another batch while the girls are at school so I won’t be interrogated for missing cookies later when they get home.  The other issue I have with these cookies is how easy it is to eat one, grab another, and before you know it, I’m caught in an addictive cycle of eating these cookies!  It’s ridiculous!

Making these cookies are just beginning of our holiday baking.  A cookie tray just isn’t complete without this classic cookie which for some reason seems to only appear around Christmas time.  The girls and I love making these cookies because the dough only takes minutes to make and we always have fun pressing each Hershey’s Kiss down on each freshly baked peanut butter cookie right when they come out of the oven.  The kids think I don’t know that they take a few Kisses plop them in their mouths when I’m not looking, but trust me… I know.  It’s all good. When food allergies prevent you from enjoying the food you love and want to eat, it has the tendency to make a person sad.  Being 8 years old and allergic to dairy has been a challenging journey for my daughter, Abigail, who loves pizza and ice cream but sadly can have neither.  Yes, there is dairy-free cheese and ice cream available on the market but Abigail misses the taste of “real” cheese and the flavors her her favorite types of ice cream.

Fortunately for us, we have a very nice blender which can make yummy soft serve ice cream in just a couple minutes.  The only problem with making ice cream this way is freezing the leftovers hoping hoping for the same creamy texture as a freshly made soft serve batch.  Because I add ice cubes to the soft serve mix, when trying to freeze any leftovers, it is more icy than creamy.  Recently I purchased this Cuisinart Ice Cream Maker to make creamy ice cream you can scoop.  I’ve been experimenting with different flavors and proportions of cream, milk, fruit, and other mix-ins with great success.  But I was asked by Abigail if we could try making dairy free ice cream we can also scoop for her to enjoy too.  I asked her what flavor of ice cream she would like to have and she enthusiastically replied, “chocolate peanut butter banana.”  Coincidentally, I had also just purchased agave syrup to use a sugar substitute when cooking and baking. Peanut Butter Cup Brownie Bites Recipe

[donotprint] I have a small confession to make.  I have a secret stash of Reese’s Mini Peanut Butter Cups on the top shelf of my pantry.  I usually access it nightly after the kids have gone to bed.  But today I had this thought.. wouldn’t these little peanut butter cups be so cute and so good inside a mini brownie?  It would be just enough brownie to suspend the mini peanut butter cup just perfectly.  Next thing I knew I was baking up a batch and popping them in my mouth.  Heavenly.

The nice part about this recipe is that the baking time is only about 15 minutes and the batter can be prepared in a mixing bowl.  No special mixer required.  [click to continue…]

Puppy Chow Recipe – Muddy Buddies

I LOVE LOVE LOVE when some of the most yummiest treats are also the most easiest to make. Ten years ago my friend Nancy gave each woman in our small group a beautifully packaged container of Puppy Chow aka Muddy Buddies. This was the first time I had ever had this “crazy good” treat. From the first bite I was hooked but also intrigued by what it was made of. When she told me how she made it I couldn’t believe it because it was such an easy recipe yet the combination of all the ingredients produced such a wonderful taste. I will warn you though, it is very addicting. Batches of this stuff have been known to disappear within minutes in our home. Best of all, Chex now makes their rice and corn cereal Gluten-Free. Today I made a batch of Oatmeal Peanut Butter cookies. If you love Nutter Butters (and who doesn’t?) and/or Girl Scouts’ Oatmeal Peanut Butter Cookies (aka Do-Si-Dos), YOU WILL LOVE THESE COOKIES!
