Toasted Almond Cranberry Chicken & Amazing Taste Seasoning

Last week Amazing Taste Seasoning sent me a box of seasonings to enjoy and review. Since receiving them we’ve tried the “Malibu” seasoning, but when I grilled those last week I was being intentional about using them. Last night was a whole different ball game.

Typically when I wait to the last minute to cook, I will season meat with salt and pepper. But last night I remembered reading on the back of the Amazing Taste packet that you only needed to marinade the chicken for 5 minutes. I was able to find frozen chicken breasts and a bag of green beans in the freezer. I also found an onion and just like that I was already cooking. I grabbed the “poultry” seasoning and dumped it over the bowl of cubed chicken, added olive oil, and orange juice stirring it until combined. Needless to say I was so surprised at how much I enjoyed the flavor of the chicken in the dish I prepared. I made this on a whim and the results were great!

cat-pktSo far we’ve only tried the Malibu and Poultry seasoning packets but our whole family enjoyed both dinners using them. A good indicator of this would be neither kids asking for ketchup and BBQ sauce to drown their meat in. Success! Each packet has instructions on the backside for using the seasoning as a rub or marinade. If you use it as a rub, the spices will be way more intense than the marinade. I prefer the 5 minute marinade because it compliments the chicken without overpowering it, not to mention it is very quick and easy. But my husband likes his meat strongly flavored and prefers rubs. Between the 2 packs I’ve tried, I prefer the Poultry packet over the Malibu because of the amount of paprika in the Malibu packet. If you are not a fan of paprika, stick to the Poultry seasoning. The spice packets are inexpensive ($.99 each) but more importantly being able to prepare a tasty dinner in 15 minutes from start to finish is priceless. I would definitely buy the Poultry Seasoning again and am looking forward to trying the other varieties. These seasonings are perfect for when you’re short on time but want a lot of flavor in your dishes. Perfect weeknight dinner! Below is the recipe for Cranberry Almond Chicken I whipped up for dinner last night using Amazing Taste Seasoning. Enjoy!

Easy Toasted Almond Cranberry Chicken Recipe
Serves 4 people

Ingredients:

2 lbs. chicken breast, cubed and thawed.

1 medium onion, chopped

1 bag of frozen or fresh green beans

3 tbs. of olive oil

1/4 cup of orange juice (or water)

1/4 cup of orange juice (or water)

1/2 cup of dried cranberries

1/2 of almonds, chopped

2 tsp. of sugar

2 tbs. olive oil

lemon wedges

Directions:

Preheat a skillet on med-high heat. In a small bowl combine 3 tbls. of olive oil, 1/4 c. orange juice, and a packet of Amazing Taste Seasoning Packet and add chicken. Stir until chicken is evenly coated. Set aside.

Add sugar, almonds, and cranberries to the hot skillet and continuously stir until almonds look toasted (approx. 2-3 minutes) Remove almond/cranberry mixture to a small bowl/plate. Next add 2 tbs. of olive oil to the skillet and saute onions for 1 minute and then add chicken. Cook and saute chicken for 3 minutes then adding green beans to your pan. Using up to 1/4 of OJ, cook for an additional 5-8 minutes until chicken is done. After you have plated your chicken dish, top off with toasted almonds, cranberries and fresh lemon juice. Enjoy!

*side dish recommendation: steamed rice

**As a side note, this dish rocks any of those frozen dinner bags you would buy at the store. Less expensive and more quantity too.

    I have made something similar and love to have it as a pre-thanksgiving meal when your already hungry for those flavors! My suggestion to those who don’t have the flavor packet is salt, pepper and rosemary. Goes great with the orange juice. Also- instead of sugar use 100% maple syrup. Thanks for reminding me of this wonderful meal!

    amazing! cranberry and chicken is my fav combo, but with almonds, that just kicks it up a whole notch!

    I love the idea that you only have to marinade for a short period of time. I have a bad memory and sometimes I forget to marinade overnight and then I have to make something else for dinner. Your meal looks super tasty. I have to try it!!!

    This chicken dish looks delicious with almonds and cranberry and sounds like the Amazing taste was an excellent seasoning here. I also liked this seasoning mix.

    Great review of the seasoning! I like to keep things in the pantry for “frantic dinners” when I am starving and realize I haven’t even thought about dinner. I will look for it next time I am at the store!
