I have nothing really profound to say other than Happy Summer to you. I hope you’re enjoying the warmer temperatures and taking advantage of all the wonderful seasonal berries, fruit, and vegetables I see gracing farmers markets and grocery stores. I’m trying my best at keeping my sanity as I referee my kids between sibling squabbles and intentionally ignoring them to sometimes work it out for themselves. Abbi is turning 13 this Saturday, and I find myself in denial about how she is, in fact, her own person. I watched her for the first time at the park, leave our family table to go “hang out” with a group of friends which in the past has only been girls, and now was girls and boys transitioning from opposite gender awkwardness to the cusp of post-puberty maturity that I am still shaking my head about. When I asked Abbi if she was hungry, she politely declined while not making eye contact. Still processing this.
What I do have for you today is an easy recipe for grilled bbq chicken legs – one of Abbi’s favorite dishes we will be making again for her 13th birthday this Saturday at the beach. I find dark meat to be more flavorful to begin with, and with the help of brining the meat overnight, par baking it in the oven, and finishing it off with our favorite bbq sauce, this is a definite crowd favorite. And seriously, the drumstick is every kid’s favorite part of the chicken.
As I come to terms with parenting a teenager, I remind myself what a pain in the butt I was at her age. I find there is grace for the both of us. And at the very least, we can come together to celebrate her birthday with her favorite foods, which includes these chicken legs.
- Ice cubes
- Kosher salt
- Apple cider vinegar
- Chicken drumsticks
- Olive oil
- Kosher salt and pepper
- barbeque sauce
