What if I told you it wasn’t dessert, but it was breakfast dressed to look like dessert with all the health benefits of a complete meal including healthy complex and simple carbohydrates, a substantial amount of protein, and healthy fats? What if I told you these yogurt granola fruit tarts were super easy to make, would you make one?
Well, these tarts are good for you and feel indulgent to eat. Made with a granola crust with a tiny bit of honey and coconut oil and filled with plain Greek yogurt sweetened just a little, and topped off with fresh fruit, these tarts are a guilt-less pleasure you can feel good about eating. The granola provides the benefits of eating complex carbohydrates to give you sustaining energy through the day. The protein will feed your muscles, and the fat, in particular coconut oil, will give you a natural boost of energy because it is a MCT oil which does not store as fat but is used as a unit of energy in the body right away. Are you still with me?
You can make these in ramekins but if you have any mini tart pans, I highly recommend using them just for the visual aspect. You can make any combination of tart including banana maple walnut or raspberry almond – pictured below.
Personally I think these would be great for brunch or a healthy dessert alternative.

- coconut oil (melted)
- honey
- your choice of yogurt (Greek yogurt works best and non-fat Greek yogurt contains the most amount of protein)
- fresh sliced fruit
- optional toppings: honey, agave syrup, maple syrup, chopped nuts, chia seeds, coconut flakes, fresh mint
