Mango Pico De Gallo

I love fresh pico de gallo.  I love mango pico de gallo even more.  I will eat this stuff with anything.  My favorite way to eat it is with eggs in the morning for breakfast. It is so good. I relish in making it because it is not only yummy to eat, its just a beautiful condiment to gaze at. The first time I ever made pico de gallo sealed the fate of jarred salsa forever.  And that my friend is a good thing.

Alice’s Mango Pico De Gallo

Ingredients
3 medium tomatoes diced
1/2 mango diced
1/2 medium onion diced
1/4 cup fresh cilantro chopped.
1 jalapeño seeded and minced
juice of 1 lime
1/4 tsp salt

Directions:
Combine all the ingredients and serve.   Enjoy!

We love Pico De Gallo, and this one looks simple and tasty!

Oh baby, that looks good… it would be awesome on Salmon too! I did pan-seared salmon brushed with honey and olive oil and then with a pico de gallo like this except with peaches last summer, it was AWESOME! I’m totally going to try it with mango next.
