Mango Pico De Gallo

As much as I love traditional pico de gallo, I find it hard to resist the more tropical variation using fresh ripe mangos.  Savory-sweet flavors harmoniously coming together make my taste buds happy. The first time I ever made fresh mango pico de gallo sealed the fate of ever buying jarred salsa again, forever.  And that my friends is a good thing.

A fresh and tropical condiment. Perfect for chips and tacos.
Ingredients
  • 3 medium ripe tomatoes, diced
  • ½ mango, diced
  • ½ medium onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño seeded,minced
  • 2 tablespoons fresh lime juice
  • ¼ tsp salt
Instructions
  1. Mix all the ingredients in a bowl and serve.

    I made it with a twist. I added red and green grapes. A dash of ginger and cumin. And a 1/3 cup of orange juice. If I tell you this was simply amazing! You better believe it!

    Oh baby, that looks good… it would be awesome on Salmon too! I did pan-seared salmon brushed with honey and olive oil and then with a pico de gallo like this except with peaches last summer, it was AWESOME! I’m totally going to try it with mango next.
