I have a fond appreciation for simple living and simple cooking. With that said I truly appreciate the simplicity of seasoning food with salt, pepper, and olive oil. My philosophy is to let food taste like food.
During summer I try really hard not to turn on the oven unless I have to and instead grill as much as I can. Last week I grilled halibut and topped it off with a lemon-basil vinaigrette. It was such a simple, easy, and quick dinner yet it was full of flavor and perfect for a light meal. I placed each piece of halibut on a bed of sauteed swiss chard and voila, dinner was served. Grilled Halibut with Lemon-Basil Vinaigrette

Fresh lemon juice and grated lemon rind from 1 med-large lemon
2 tbl. of olive oil
3 garlic cloves, minced
3 tbl. of fresh chopped basil
1 tbl. capers
Salt and pepper
4 – small halibut steaks
Preheat grill to med-high. Season halibut with salt and pepper and set aside.
For the Lemon-basil Vinaigrette, whisk all the other ingredients in a small bowl. Take 1 tbl. of the vinaigrette and brush it on each piece of fish.
Grill each piece of fish until just cooked through, approx. 4 minutes on each side. Plate each piece and top it with the vinaigrette. Enjoy!
