Easy Summer Dinner: Grilled Halibut with Lemon-Basil Vinaigrette

I have a fond appreciation for simple living and simple cooking. With that said I truly appreciate the simplicity of seasoning food with salt, pepper, and olive oil. My philosophy is to let food taste like food.

During summer I try really hard not to turn on the oven unless I have to and instead grill as much as I can. Last week I grilled halibut and topped it off with a lemon-basil vinaigrette. It was such a simple, easy, and quick dinner yet it was full of flavor and perfect for a light meal. I placed each piece of halibut on a bed of sauteed swiss chard and voila, dinner was served. If you are looking for a weeknight meal which is simple, easy, and quick, may I suggest this recipe? Enjoy!

Grilled Halibut with Lemon-Basil Vinaigrette

Ingredients:
Fresh lemon juice and grated lemon rind from 1 med-large lemon
2 tbl. of olive oil
3 garlic cloves, minced
3 tbl. of fresh chopped basil
1 tbl. capers
Salt and pepper
4 – small halibut steaks

Directions:
Preheat grill to med-high. Season halibut with salt and pepper and set aside.

For the Lemon-basil Vinaigrette, whisk all the other ingredients in a small bowl. Take 1 tbl. of the vinaigrette and brush it on each piece of fish.

Grill each piece of fish until just cooked through, approx. 4 minutes on each side. Plate each piece and top it with the vinaigrette. Enjoy!

    very simple and lovely pics. we did something similar with tuna recently and blended olive oil and basil till pureed. no acid in it – the basil flavor was bright! this is a great meal after a weekend of indulging!

    I’m in love. I also totally agree with what you said, that food should taste like food. I love how you used minimal, fresh ingredients to tie this dish together to let the real flavors of the halibut shine through.

    As Jenn said, grilled to perfection. The photos are great (just like all of the other photos on your site) and the addition of capers is lovely! I don’t know what it is, but I love capers!

    The halibut with that dressing is making me drool! Great post Alice! 🙂

    P.S. Random: I just noticed how much I use exclamation points ( a bit too much, I must say. I’ve got to cut down on that…). LOL

    What a tasty and healthy meal… looks wonderful! I enjoy making marinades and spice rubs, but I also do my share of cooking with olive oil, salt, and pepper. Your picture is beautiful, too – great idea to plate the halibut on top of the swiss chard.
