Peanut Butter Cup Brownie Bites Recipe

I have a small confession to make.  I have a secret stash of Reese’s Mini Peanut Butter Cups on the top shelf of my pantry.  I usually access it nightly after the kids have gone to bed.  But today I had this thought.. wouldn’t these little peanut butter cups be so cute and so good inside a mini brownie?  It would be just enough brownie to suspend the mini peanut butter cup just perfectly.  Next thing I knew I was baking up a batch and popping them in my mouth.  Heavenly.

The nice part about this recipe is that the baking time is only about 15 minutes and the batter can be prepared in a mixing bowl.  No special mixer required.  If you don’t have a mini cupcake pan, these can be made in a 9×13 baking dish too.  Enjoy!

Mini brownie bites with a peanut butter cup center.
Ingredients
  • ¾ cup butter, melted
  • ¾ cup white sugar
  • ¾ cup brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 eggs
  • ¾ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 40 mini Reese's Peanut Butter Cups, unwrapped from the brown paper
  • mini muffin tin paper liners
Instructions
  1. Preheat oven to 350 degrees F. Generously spray non-stick spray into a paper towel and wipe the top of a mini cupcake pan. Line the tins with a paper liner.
  2. In a medium bowl, mix melted butter, sugars and vanilla. Beat in eggs one at a time.
  3. Gradually add flour, cocoa, and salt and mix until combined.
  4. Fill each mini cupcake tin slightly more than halfway but not more than ⅔ full. Place a peanut butter cup in each slot pressing it down until it is almost level with the batter. Bake in preheated oven for 15-18 minutes or until done. Allow the brownie bites to cool for 5 minutes before removing from the cupcake tin. Enjoy!

    Hi Ladies!
    I seldom use cupcake liners and I love to use my mini pan. Thank goodness for “Pam” or any cooking spray! Even my mini’s pop right out. Give it a try and you’ll have better luck. Best invention ever!

    What is so special about Reese’s peanut butter cups? Is it the way it melts in your mouth without sticking to the roof of your mouth? Is it the sweetness and the saltiness combination that you taste? Is it the tiny little pieces of peanut that you feel in your mouth? Or is it all of the above?

    Tried making some – tasted nice, but I didnt have the tray to make them that small so they just collapsed – ended up with goooey mess 🙂

    I saw a similar recipe some years ago and have been meaning to try it. Now I think I’ll try these and substitute Splenda for the sugars and use the sugar-free peanut butter cups for the diabetics in my family.

    I originally found this recipe through Tasty Kitchen. I made these delicious treats and posted a review that wasn’t totally favorable. I followed your directions and had such difficulty removing the cookies from the pan. They broke apart something terribly. I patched them together as best I could and sent them on their merry way with my daughter and her boyfriend to enjoy on their camping trip. I found them very good but not too attractive. Yesterday Nathan gave me feedback. He said they were the BEST cookie he has ever had. It is his absolute favorite. I just wanted to share this with you. I tried to make a 2nd post on Tasty Kitchen to share with the others but it wouldn’t let me. I just wanted you to know, they are indeed delicious. Thank you. I will make them again.
