Rustic Strawberry Rhubarb Tart

Watching the news and reading stories about the devastation in tornado-ravaged Oklahoma has been both heart-breaking and sobering.  Events like this put life into perspective in only a way tragedy can – unfortunately.  Seemingly important things all of a sudden don’t seem very important anymore when images of homes, entire neighborhoods, are flattened or parents in tears over their missing children come on our screens.  It is all so very sad.

As I’ve been reflecting about this the last couple days one thing is certain.  People are resilient especially when united for the greater good of mankind.  What this world needs more of are caring, compassionate people who give a damn about other people.

We are heading into Memorial Day weekend.  I want to challenge everyone to make it a point to be kind to someone who needs kindness in their lives this weekend.  Show compassion where there is none.  Be generous with what you have towards people who are in need.  Above all else, love.  Just love on someone.  Be thankful for what you have and extend that grace to someone else.  Let this Memorial Day not only be a day to remember the brave men and women who served this country in the US Armed Forces but also as a day to remember those who are hurting and in need of hope.

Today I have a recipe I posted in my PBS Parents column.  The message is similar to what I just wrote.  Bake two of these tarts and find someone to give it to that can use some encouragement today.  You can never underestimate the power of showing someone you care, and I think giving someone a beautiful fruit tart is a beautiful way to do it.

A quick and simple rustic free-form strawberry rhubarb tart recipe
Ingredients
  • sugar
  • all-purpose flour
  • kosher salt
  • allspice
  • strawberries
  • rhubarb
  • fresh lemon juice
  • vanilla extract
  • 9-inch unbaked refrigerated pie crust (store-bought or homemade)
  • crushed graham crackers

    Wow! This looks so yummy! This tart feels very Christmassy for me. This might be best served during the holiday season. But of course, I definitely won’t wait for that season to come. I will surely try this recipe if I have free time. Adding honey might be good too–to add a distinct sweetness. Aside from rhubarbs, what other alternatives can you suggest that would blend with the taste of strawberries?

    I love this recipe ! Reminds me of you making soap at home, Mom.
    And it’s fun to see photos of your house there and see
    Dad in that comfy chair we sat in when we visited,
    attempting to use the slow internet 🙂

    I can’t wait to hear how the soap turned out in terms
    of using it. Does it smell different since it is made with
    animal fat? Any other differences from vegetable-based soap?
