We love Sunday mornings around here. It is truly the only day of the week most everyone sleeps in. My son however has not learned the “sleeping in” on Sunday ritual. So when he gets up, I get up. I start the day making myself a cup of coffee and start baking. This morning I decided to bake an apple coffee cake. I love this recipe because it is not overly sweet and the warm apple slices baked inside shout “this cake is made with love” in every bite. And the scent of cinnamon and warm apples that permeates throughout the house is Divine. Ask my family, they love waking up to the smell of scratch baking at its finest.
The first time I tried this cake was 10 years ago at a Womens’ Retreat and it is one of my most favorite and beloved coffee cakes. Everyone who tries it loves it and asks for the recipe. So if you ever find yourself waking up early on a Sunday morning, make yourself a cup of tea or coffee and bake this cake. I swear on Rose Levy Beranbaum’s “Cake Bible”, you will love this. It may even become your favorite new coffee cake.
Apple Coffee Cake Recipe
3 cups AP flour
2 cups granulated sugar
3 tsp. baking powder
2 tsp. of vanilla
1/4 tsp. of salt
1/2 cup orange juice
1/2 cup of apple sauce
1/2 cup vegetable oil
*5 Granny smith apples, peeled and sliced
*1/3 cup of granulated sugar
*1 tbl of cinnamon
Preheat oven at 350°F and grease a 9×13 baking dish. In a medium bowl, toss sliced apples, 1/3 cup of sugar, and cinnamon in a bowl and set aside.
In a mixing bowl combine flour, 2 cups sugar, baking powder,vanilla, eggs, salt, oj, apple sauce, and vegetable oil until well mixed. Approx. 5 minutes in a mixer. Pour half the batter into baking dish and arrange apple slices on top. Pour and spread the rest of the batter on top of the apples. Bake for 60 minutes or until done. Cut coffee cake into squares and serve warm. Enjoy!

Best coffee cake I’ve had in years! Reminds my of my childhood in rural Connecticut. Fruit desserts are my favorite. I’m going to try the same batter and layering technique with other fruit, like rhubard, plums and pears. Thank you!

You know what I really love about this cake?, it reminds me of my neighbor named Alice, whom I was named after. She would make a very similar cake using the apples from her tree. She was the best little old lady baker ever.
