Here is a mac and cheese recipe that is easy, simple, and filling. It makes a wonderful main or side dish, perfect for a weeknight supper.
Easy One Pot Mac and Cheese
serves 2-4 people
Ingredients:
- 1 cup sour cream
- 1 cup of cottage cheese (for less noticeable curds, place cottage cheese in the food processor or blender)
- 8 oz of dried pasta
- 8 oz of cheddar cheese
- 1/4 cup heavy cream
- pinch of salt, pepper, and paprika
Directions:
In a medium pan cook pasta according to instructions to al dente, drain and set aside. Turn stove burner to medium heat and add heavy cream, cheese, sour cream, cottage cheese, salt, pepper, and paprika.
Stir continuously until you have a nice cheese sauce. Turn off heat and place pasta back in the pan. Mix the pasta and sauce until each pasta piece is fully coated. Garnish with a little bit of cheese and serve. Enjoy.
