Avocado Shrimp Salad

 

Inspired by one of Seattle’s most beloved fine dining restaurants, one of my favorite salads I make at home is an avocado shrimp salad. Each element perfectly pairs with each other.  I just love the creaminess of sliced avocado with fresh shrimp.  The dill in the 1000 island dressing adds just enough tartness to the shrimp without overpowering.  I typically make this salad when company comes over although it is  easy enough to make for any lunch or dinner.  I love this salad because of its simplicity and how elegant it looks on a plate.  Enjoy!

 

Avocado Shrimp Salad

Ingredients:
avocado(s) (1 avocado for every 2 servings), thinly sliced vertically
any sized pre-cooked shrimp
1000 island dressing (2 tablespoons per serving)
red or green leaf lettuce – washed and chopped
*optional lemon wedge
*optional chopped dill or parsley to garnish

Directions:
Placed chopped lettuce on each place. Carefully fan out half an avocado which has been sliced over the lettuce. Pour 2 tablespoons of 1000 island dressing on top of the avocado and top with 1/3 cup of shrimp. Serve with a lemon wedge and garnish with chopped dill or parsley. Enjoy!

    This looks awesome! Im deff going to make this for my boyfriend one night right along with your steamer recipe. He will go nuts. We absolutley love steamers and he cant get enough of shrimp and avocados. This will be a perfect meal! Love your website and all your articles!

    Just not my day…sorry for the previous post but using daughter’s laptop and laid up with bum knee..guess trying to operate unfamiliar unit when laying down while on meds didn’t work so well!

    So what I wanted to say was how beautiful this looks and good and I want some. Going on 4th day not able to walk with knee injury and dying for something other than a pot pie or sandwich..4 in the morning and I’m now craving a salad!

    Looks wonderful Alice! We used to serve something like this at the restaurant I used to work at. Only instead of 1000 Island we served it with creamy pesto. I really like the sound of 1000 Island though so I’ll have to try it soon. Thanks for the reminder that something so simple can be so delicious.
