Mother’s Day Ultimate Pancake

Mother’s Day is just a couple days away.  I thought I would pull out one of my favorite breakfast dishes from the archives to share.  Don’t let these pictures intimidate you, preparing this pancake is pretty easy since you’re taking your favorite breakfast elements and just layering them similar to a cake.  I originally posted this last year when I made this for Father’s Day but it would also be great for Mother’s Day too. Recipe for Breakfast Pan”cake”

4 – 8″ pancakes

1 cup of whipped cream

1 cup of sliced strawberries

1.5 cups of roasted potatoes

1.5 cups of scrambled eggs

1 lb. of cooked bacon

Instructions:

Lay the first pancake down on a plate or serving platter. Add a layer of roasted potatoes all the way to the edge. Add another pancake and add the scrambled eggs. Add the third pancake and add your bacon. Add the final pancake. At this point if everything is cold, you will want to microwave everything for 3 minutes right before serving. Top off with strawberries and whipped cream and serve immediately. Enjoy!!

    Pegs… I used Krusteaz pancake mix. It works every time for big fluffy pancakes!

    We made this last night for Mother’s day dinner-a hit for the whole family. Strawberries at the store looked bad so we subbed bananas or thawed frozen raspberries. Also, sausage for the non-bacon eaters in the house. Everyone loved it. Thank you.

    That is literally a jaw dropper. I will be making this for my surfer on Father’s Day. It never fails that when we go out for breakfast, he orders a little bit of everything. This will be right up his alley 🙂

    This is appalling!! And this is coming from someone who had a cheesecake chocolate chip cookie bar with chocolate chip graham cracker crust for breakfast. GEEEEWWW!!!!!!! 😛
