Radish Truffle Butter Recipe

If someone would have told me a few months ago I would fall in love with eating radishes with a small pat of butter dipped in truffle salt I would have thought they were nuts. But this is exactly what happened when eating at the Pike Brewery in the Pike Place Market. I was there with other food bloggers for a brewery tour and when we sat down to eat, there were whole radishes on a plate with truffle salt and butter. I was confused on how to eat the radishes so I waited to see what others were doing so I could follow their lead. Oh my word… where has this combination been all my life? Seriously.

Over the weekend my husband and I were at a bookstore and while thumbing through cookbooks, I encountered a recipe in one of the Lee Brothers cookbooks for radish butter. I guess I’m the last person to know eating radishes and butter together is common. And just so you know, I am new to truffle salts too. I was introduced to truffle salt earlier this year and have been obsessed with them ever since. I’ve also learned quality matters when buying these addictive finishing salts. The one I use is also from the Pike Place Market’s Truffle Cafe. They sell all things truffle. Truffle salt is not cheap but it will last you a long time and in my opinion is worth it especially seasoning popcorn. Trust me on this one.

After seeing the radish butter recipe in the cookbook I mentioned above and my experience with truffle salt, butter, and radishes at Pikes Brewery I decided to make radish truffle butter. Oh heavens… oh my.  It took me about 3 minutes to make and it turned out better than I could have hoped for or expected.  Even my daughters who hate radishes loved it. We used the radish truffle butter on top of our steaks and smeared some on corn on the cob.  It was truly awesome.

The creaminess of the butter, sublime flavor of the truffle salt, and the finely chopped raw radishes made for one incredible spread.  One small dollop of this butter made our steaks go from really good to amazing.  If you have some truffle salt in your pantry, I invite you to try this recipe.  I believe you’ll love it as much as we do.  Enjoy!

Radish Truffle Butter

Ingredients:

1 1/2 cups quartered radishes

3/4 teaspoon truffle salt

1/2 cup (1 stick) softened butter

Directions:

Place all the ingredients in a food processor.  Pulsate everything for a few seconds at a time until well combined.  Enjoy!

    Growing up in the 60’s, we made sandwiches out of anything. We would thinly slice them and layer the slices on buttered bread and lightly salt them. That was my favorite summer sandwich.

    I love radishes! And I can’t wait to try this recipe. That is once I get the truffle salt. Going to check to see if Cost Plus World Market in my area, ‘the OC’ carries it. If not most likely will have to purchase online. Expensive stuff! But I imagine it can be used sparingly and impart its flavor. Don’t know what everyone here has been paying for it ‘in store’ or ‘online’. I did find a couple of ‘online’ stores and found the price really varied. One online store, Fusion, 4 oz for 17.99 anothet online store wanted 27.99 for 3.5 oz…KACHING! So it definately pays to shop around.     The whole foods in Roch. Mi only carries truffle oil, so I ordered the salt from the Truffle Cafe. Cannot wait to try this!

    I dig radishes – they totally remind me of being a kid. My Dad had a huge garden and radishes were always showing up in salads at dinner.
    What an interesting combination…I also have never heard of truffle salt…I will be hunting!

    How wonderful to come across this recipe and especially today! I came here through Pioneer Woman’s recommended sites. Thank you from the bottom of my heart, Ree!
    My mother (passed 6 years ago) used to “indulge” herself, as she called it – with radishes, butter & sea salt. She said it was one of her favorite things. As a child I wasn’t too keen on radishes – but now – I thought I was the only one in the world that enjoyed or even thought of this combination! The truffle salt is an amazing addition to her original – bless you for bringing her close to me today.

    This looks amazing! Have you considered submitting it for the contest over at food52.com? The contest for this week is radishes, and if you win you get to be published in their cookbook. I have no radish recipes. Unless crudites counts as a recipe, and I’m pretty sure it doesn’t.

    The Truffle Cafe is an amazing place for all things truffle. They are across the cobblestone street from the market. If you go, they have a sample bar so you can taste everything. We love the truffle salt from there. Sprinkle some on popcorn and it’s heavenly. If you don’t have radishes, you could also just mix in some truffle salt with butter. Sublime.

    I don’t buy radishes, because I don’t know what to do with them and will most likely rot in the fridge. But this, this radish truffle butter sounds so wonderful…. now I’ll have to go to Pike’s Place and find some of this wonderful truffle salt and make some for the family to eat with their meat!

    I’m guessing Whole Foods or PCC has them. Do you live in Seattle? If so, it is worth the trip to visit Pike Place Market to the Truffle Cafe. I have tried another brand of truffle salt and I found the one I linked to in the post to be amazing. You can also order from them directly online.

    That looks divine. I love Maldon salt, butter and radishes on bread, but I’ve never made those ingredients into a spread. Will most def do that next time we have steaks. Is there somewhere on the Eastside that carries truffle salt? Whole Foods or PCC maybe? I’ll be on the lookout now for sure!

    awesome recipe! i too would have never thought this would taste good but i can totally picture it by the way you described it. when i go out to eat middle eastern food, i have noticed that my persian friends will wrap the raw radishes in the flat bread they give us with generous amounts of butter.

    I never would have chosen this recipe on my own, as I’m not a radish fan. But you describe it so beautifully, I think I’ll have to give it a try!

    Ok, I am going to the grocery store and get some radishes. I have never had radishes (like fresh ones) because I have no idea what to do with them!

    I notice that the ingredients included “finely chopped” radishes, but your pictures show halved (quartered?) radishes. ???
